Baked feta pasta
– 8oz block feta cheese (I used tomato basil feta)
– any veggies you’d like (I used asparagus and cherry tomatoes)
– olive oil
– salt, pepper, minced garlic and parsley
– pasta (short pasta is better but any will work)
You probably have most of this in your fridge or pantry except the feta cheese! So, pretty easy to throw together
Drizzle veggies and feta with olive oil and seasonings, make sure feta is positioned in middle. 400 degrees for 30 mins until veggies are tender and feta is super soft and will stir easily. Remove from oven – use the back of a spoon and mash feta until it’s creamy. Mix with veggies. Reserve 1/2cup of your pasta water. Drain pasta. Add pasta with feta mixture. Add pasta water. Season with more parsley! (I sprinkled some parm cheese on mine too)
This would bake best and mix best with a 9×13 dish but I had to use a smaller one tonight.
