These handheld delights combine the classic flavors of a cheeseburger with the convenience of a muffin-sized treat. They’re easy to make and freezer-friendly!

Ingredients

  • Meat Filling:
    • 1 pound ground beef (for vegan option, substitute Gardein Meatless Soy Crumbles)
    • ½ cup ketchup
    • 2 tablespoons brown sugar
    • 1 tablespoon prepared mustard
    • 1½ teaspoons Worcestershire sauce
  • Cups:
    • 1 tube (12 ounces) refrigerated buttermilk biscuits
  • Cheese Topping:
    • ¾ cup shredded cheddar cheese OR
    • ½ cup cubed Velveeta

Instructions

Step 1: Prepare the Meat Filling

  1. Cook the meat:
    • Heat a large skillet over medium heat.
    • Add ground beef and cook until browned and no longer pink, breaking it into crumbles as it cooks.
    • For vegan soy crumbles, sauté until heated through according to package instructions.
  2. Drain excess grease: Carefully drain the fat from the skillet.
  3. Add flavorings:
    • Stir in the ketchup, brown sugar, mustard, and Worcestershire sauce.
    • Mix well and simmer for 2-3 minutes to let the flavors meld.
    • Remove from heat and set aside.

Step 2: Assemble the Cheeseburger Cups

  1. Preheat the oven: Set to 400°F (200°C).
  2. Prepare muffin tins: Grease a 12-cup muffin pan to prevent sticking.
  3. Shape the biscuit cups:
    • Press each buttermilk biscuit onto the bottom and up the sides of each muffin cup.
    • Make sure the dough covers the sides to form a « cup. »
  4. Fill with meat mixture: Spoon a generous portion of the prepared beef mixture into each biscuit cup.
  5. Add cheese: Top each filled cup with shredded cheddar cheese or small cubes of Velveeta for a creamy melt.

Step 3: Bake and Serve

  1. Bake: Place the muffin tin in the preheated oven and bake for 14-16 minutes, or until the biscuit cups are golden brown and cooked through.
  2. Cool briefly: Let the cheeseburger cups rest in the muffin tin for 3-5 minutes before carefully removing them with a fork or spoon.

Freezing and Reheating Instructions

  • To Freeze:
    1. Cool completely before freezing.
    2. Place cheeseburger cups in a freezer-safe container or ziplock bag, separating layers with waxed paper to prevent sticking.
  • To Reheat:
    1. Thaw in the refrigerator for 8 hours or overnight.
    2. Reheat in a 375°F oven on a baking sheet until warmed through (about 10-15 minutes).

  • Cheese options: Try pepper jack for a spicy twist, or Swiss for a milder flavor.
  • Add-ons: Sprinkle cooked bacon bits or diced pickles on top before serving for an extra burst of flavor.
  • Vegetarian version: Use vegan meat crumbles and plant-based cheese for a vegetarian/vegan option.
