Ingredients

Crust:

  • 1 cup vanilla wafer crumbs (approximately 30-35 wafers, finely crushed)
  • 1 cup finely chopped pecans
  • 1 stick (½ cup) unsalted butter, melted

Cheesecake Layer:

  • 8 oz. cream cheese, softened to room temperature
  • 1 cup powdered sugar
  • 16 oz. whipped topping (such as Cool Whip), divided

Pudding Layer:

  • 2 small boxes (3.4 oz each) cheesecake flavored instant pudding mix
  • 3 cups cold milk

Topping:

  • 1 can (21 oz) Lucky Leaf Cherry Pie Filling
  • ½ cup chopped pecans

Instructions

  1. Prepare the Crust:
    • Preheat your oven to 350°F (175°C).
    • In a medium mixing bowl, combine the vanilla wafer crumbs, finely chopped pecans, and melted butter. Mix until the crumbs are fully coated with butter and the mixture resembles wet sand.
    • Press the mixture firmly into the bottom of a 9×13 inch baking pan to form an even layer.
    • Bake the crust in the preheated oven for 15 minutes until set. Remove from the oven and let it cool completely on a wire rack.
  2. Make the Cheesecake Layer:
    • In a large mixing bowl, combine the softened cream cheese and powdered sugar. Use an electric mixer to beat the mixture until it is smooth and creamy.
    • Fold in 1½ cups of the whipped topping (about half of the 16 oz container) until well combined.
    • Spread this cream cheese mixture evenly over the cooled crust, using a spatula to smooth the surface.
  3. Prepare the Pudding Layer:
    • In a separate large mixing bowl, whisk together the cheesecake flavored pudding mix and cold milk. Continue whisking for about 2 minutes, or until the pudding thickens.
    • Gently fold in 1 cup of the remaining whipped topping until the mixture is smooth and well combined.
    • Spread the pudding mixture evenly over the cream cheese layer in the baking pan.
  4. Add the Toppings:
    • Evenly spread the can of cherry pie filling over the pudding layer.
    • Spread the remaining whipped topping over the cherry pie filling.
    • Sprinkle the ½ cup of chopped pecans on top for a final touch.
  5. Chill and Serve:
    • Cover the baking pan with plastic wrap or aluminum foil and refrigerate for at least 2 hours, or until the layers are set and firm.
    • Slice into squares and serve chilled.
