Chicken and Mushroom Creamy Delight

Ingredients:

  • 2 large chicken breasts
  • 3 cans (10.5 oz each) cream of mushroom soup
  • 1 can (7 oz) mushrooms (optional, but recommended)
  • Milk (enough to achieve desired consistency, about 1 to 1.5 cups)
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • Cooked rice, noodles, or mashed potatoes (for serving)

Instructions:

  1. Prepare the Chicken:
    • Rinse the chicken breasts under cold water and pat them dry with paper towels.
    • Cut the chicken breasts into bite-sized pieces (approximately 1-inch cubes).
  2. Cook the Chicken:
    • In a large skillet, melt the butter over medium-high heat.
    • Add the chicken pieces to the skillet. Season with salt, pepper, and garlic powder.
    • Cook the chicken for about 6-8 minutes, stirring occasionally, until the chicken is no longer pink in the center and has a nice golden-brown color on the outside.
  3. Prepare the Sauce:
    • Once the chicken is fully cooked, reduce the heat to medium.
    • Add the 3 cans of cream of mushroom soup to the skillet with the chicken. Stir well to combine.
    • If using, add the can of mushrooms (drained) to the mixture. Stir to incorporate.
    • Gradually add milk to the skillet, about 1/4 cup at a time, stirring continuously until you reach your desired consistency. The sauce should be creamy and slightly thick, but not too runny. You may need about 1 to 1.5 cups of milk, depending on your preference.
  4. Simmer the Mixture:
    • Once the sauce reaches the desired consistency, reduce the heat to low.
    • Let the mixture simmer for about 5-10 minutes, stirring occasionally, to allow the flavors to meld together. Adjust seasoning with additional salt, pepper, and garlic powder if needed.
  5. Serve:
    • Serve the creamy chicken and mushroom mixture over a bed of cooked rice, noodles, or mashed potatoes.
  6. Optional Garnish:
    • For added flavor and presentation, you can garnish the dish with freshly chopped parsley or a sprinkle of grated Parmesan cheese.
