Chicken Stuffed Jalapeños Recipe

Ingredients:

  • 12 Jalapeño peppers, cut in half lengthwise and seeds removed
  • 4 oz. Cream cheese, softened
  • 1 cup Cheddar cheese, shredded
  • 2 Tbsp. Salsa
  • 1 ½ tsp. Cumin
  • ¼ tsp. Salt
  • 1 cup Shredded chicken (cooked)
  • 1 ½ tsp. Chili powder

Instructions:

  1. Preheat the Oven: Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Prepare the Jalapeños:
    • Cut the jalapeños in half lengthwise.
    • Remove the seeds and membranes to reduce the spiciness, or leave some seeds if you prefer more heat.
  3. Make the Filling:
    • In a large mixing bowl, combine the softened cream cheese, shredded Cheddar cheese, salsa, cumin, salt, shredded chicken, and chili powder.
    • Mix well until all ingredients are thoroughly combined and the mixture is creamy and well-incorporated.
  4. Stuff the Jalapeños:
    • Using a small spoon or your hands, carefully stuff each jalapeño half with the filling mixture.
    • Ensure the filling is evenly distributed and slightly mounded.
  5. Prepare for Baking:
    • Line a baking sheet with parchment paper to prevent sticking and for easy cleanup.
    • Arrange the stuffed jalapeños on the prepared baking sheet, spacing them evenly apart.
  6. Bake:
    • Place the baking sheet in the preheated oven.
    • Bake for 15-20 minutes, or until the jalapeños are tender and the filling is golden and bubbly.
