CHRIS MOUSE COOKIES
3 cups flour
¼ tsp salt
2 sticks (1 cup) butter at room temp
¾ cup white sugar
1tp pure vanilla (or almond – your choice)
1 large egg
Sliced almonds
Red or black licorice laces – cut into 2-3” long pieces
Melted chocolate – about 3-4 oz
Mix flour and salt together
Cream butter and sugar – add egg and extract
Well all blended well, refrigerate 2+ hours (overnight is good too)
Roll dough into balls and then shape them into ovals (I think they should look like the baby carrots from the supermarket – about that size and shape) with the front part a little bit elongated. Press two sliced almonds where the ears should be (see photo)
Bake 350 for about 14-17 minutes until set but just barely brown. Remove from oven and immediately poke a hole in his “posterior” and insert one piece of licorice(NOTE – if you wait too long to do this the cookies will cool too much and the licorice won’t stay in the hole)
Cool completely – melt chocolate and pipe two eyes and a nose (see picture) – you can also add other decorations if you wish. Leave till chocolate sets (NOTE – you can put them in the refrig to speed up the setting process)
