Christmas Chocolate Chip Cookies
Ingredients:
1/2 cup butter (softened)
1/2 cup light brown sugar
1/4 cup white sugar
1 large egg
2 teaspoons vanilla extract
1 2/3 cups all purpose white flour
1 teaspoon ground cinnamon (optional)
1/2 teaspoon espresso powder
1 tsp baking soda
1/2 tsp salt
1/2 cup mini semi-sweet chocolate chips
1/2 cup white chocolate chips
1/4 cup Christmas red/green/white mix sprinkes
Instructions:
Preheat oven to 350°F. Line cookie sheet with parchment paper.
In a small bowl combine flour, cinnamon, baking soda, and salt. Stir together well with a fork.
In a large mixing bowl add melted butter, brown sugar, and white sugar. Mix together until combined. Add egg mix well followed by the vanilla extract.
Add the flour mixture and mix until combined.
With a rubber spatula or wooden spoon stir in chocolate chips and sprinkles until combined.
Use a 2 tablespoon cookie scooper (or make two tablespoon mounds) and place on cookie sheets. It should make 16 cookies.
Bake for 11 minutes, remove from oven, and keep the cookies on the cookie sheet for at least 10 minutes to finish cooking. They will be super soft still, but move them to a cooling rack to continue cooling.
If you like your cookies a tad bit less ooey gooey. Bake for 12 minutes then let them sit for at least 10 minutes before moving to a cooling rack.
