Comfort Chicken, Rice, Broccoli, and Cheese
Ingredients:
- 3 thin chicken breasts
- Salt
- Pepper
- Onion powder
- Ranch seasoning
- Frank’s Red Hot Sauce
- 2 cups Minute Rice
- 1 bag (12 oz) broccoli florets (steamable)
- 16 oz Velveeta cheese
- A couple of splashes of milk
Instructions:
- Prepare the Chicken:
- Cut the chicken breasts into bite-sized pieces.
- Season the chicken with salt, pepper, onion powder, and ranch seasoning to taste.
- Add a few shakes of Frank’s Red Hot Sauce and mix well to ensure all the chicken pieces are evenly coated.
- Cook the Chicken:
- Preheat your air fryer to 375°F.
- Place the seasoned chicken pieces in the air fryer basket in a single layer.
- Cook the chicken for 15 minutes, shaking the basket halfway through to ensure even cooking.
- Prepare the Rice:
- While the chicken is cooking, prepare 2 cups of Minute Rice according to the package instructions.
- Steam the Broccoli:
- Steam the bag of broccoli florets in the microwave according to the package instructions.
- Make the Cheese Sauce:
- Cube the 16 oz of Velveeta cheese and place it in a microwave-safe bowl.
- Add a couple of splashes of milk to the bowl.
- Microwave the cheese and milk mixture for 1 minute, then stir well.
- Microwave for an additional 1 minute, or until the cheese is fully melted and smooth.
- Assemble the Dish:
- Plate the cooked rice.
- Top the rice with steamed broccoli and the cooked chicken.
- Pour the melted cheese sauce generously over the chicken, broccoli, and rice.
- Season and Serve:
- Add more pepper if desired (careful, it can come out fast!).
- Serve immediately and enjoy!
