Creamy Cheesy Chicken Lasagna
Ingredients:
- 1 rotisserie chicken
- Lasagna noodles (enough for 3-4 layers)
- 8 oz cream cheese (1 block)
- 2 packets of ranch seasoning mix
- 3 cans (12 oz each) of evaporated milk
- 2 cups shredded mozzarella cheese
- 2 cups shredded cheddar cheese
- 6-8 slices of bacon
Instructions:
- Preheat the Oven: Preheat your oven to 350°F (175°C).
- Prepare the Noodles: Cook lasagna noodles according to the package instructions until al dente. Drain and set aside.
- Cook the Bacon: In a large skillet, cook the bacon until crispy. Place the cooked bacon on a paper towel to drain excess grease. Once cooled, crumble into small pieces and set aside.
- Shred the Chicken: Remove the meat from the rotisserie chicken and shred it into bite-sized pieces. Discard the skin and bones.
- Prepare the Sauce:
- In a large saucepan, pour in the three cans of evaporated milk.
- Add the two packets of ranch seasoning to the milk. Whisk together over medium heat for about 5 minutes until well combined.
- Cut the cream cheese into small cubes and add them to the saucepan. Stir continuously until the cream cheese melts and the mixture begins to boil. Remove from heat.
- Add the shredded chicken to the sauce and stir until evenly distributed.
- Assemble the Lasagna:
- Spread a thin layer of the chicken and sauce mixture at the bottom of a 9×13 inch baking dish.
- Place a layer of lasagna noodles over the sauce.
- Spread another layer of the chicken and sauce mixture over the noodles.
- Sprinkle a generous handful of mozzarella and cheddar cheese over the sauce.
- Repeat the layers (noodles, sauce, cheese) until you run out of noodles. Make sure to end with a layer of the chicken and sauce mixture on top.
- On the final layer, sprinkle the remaining mozzarella and cheddar cheese evenly.
- Sprinkle the crumbled bacon bits over the cheese.
- Bake:
- Cover the baking dish with aluminum foil.
- Bake in the preheated oven for 30 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
- Let it Rest:
- Remove the lasagna from the oven and let it sit for at least 10 minutes before serving. This allows the layers to set and makes it easier to cut and serve.
- Serve:

Tips:
- For an extra crispy bacon topping, reserve some bacon bits to sprinkle on just before serving.
