Creamy Potato Soup

Ingredients:

  • 1 (32 oz) bag frozen diced potatoes
  • 1 (10.5 oz) can cream of chicken soup
  • Cheese, shredded (use your favorite type, such as cheddar, to your liking)
  • 1/2 cup sour cream
  • 1 (8 oz) block cream cheese, softened
  • 1 (32 oz) carton chicken broth
  • 6 slices bacon, cooked and crumbled

Instructions:

  1. Preparation:
    • Potatoes: No need to thaw the frozen diced potatoes; they can go directly into the crockpot.
    • Cream Cheese: Soften the cream cheese by leaving it at room temperature for about 30 minutes before starting the recipe.
  2. Assembling the Soup:
    • Place the frozen diced potatoes into the crockpot.
    • Pour the can of cream of chicken soup over the potatoes.
    • Add the entire carton of chicken broth to the crockpot.
    • Add the block of softened cream cheese to the mixture. It’s okay if it isn’t fully incorporated yet; it will melt and blend in as the soup cooks.
    • Add 1/2 cup sour cream to the crockpot.
    • Sprinkle in your desired amount of shredded cheese. Start with about 1 cup, and you can always add more later if you like it cheesier.
  3. Cooking the Soup:
    • Set your crockpot to the low setting.
    • Cover and cook for 4 hours, stirring occasionally to help the cream cheese melt and combine with the other ingredients.
  4. Bacon Preparation:
    • While the soup is cooking, cook the bacon in a skillet over medium heat until it’s crispy.
    • Once cooked, transfer the bacon to a paper towel-lined plate to drain excess grease.
    • Once cooled, crumble or chop the bacon into small pieces.
  5. Final Touches:
    • After 4 hours of cooking, check the consistency and flavor of the soup. Adjust the seasoning with salt and pepper if needed.
    • Stir in the crumbled bacon, reserving a small amount for garnish if desired.
    • Add more cheese at this stage if you want a cheesier soup.
  6. Serving:
    • Ladle the hot potato soup into bowls.
    • Top each serving with additional shredded cheese and reserved bacon crumbles.
    • Optional: Garnish with chopped green onions or a dollop of sour cream for added flavor and presentation.
  7. Enjoy:
