Creamy Potato Soup
Ingredients:
- 1 (32 oz) bag frozen diced potatoes
- 1 (10.5 oz) can cream of chicken soup
- Cheese, shredded (use your favorite type, such as cheddar, to your liking)
- 1/2 cup sour cream
- 1 (8 oz) block cream cheese, softened
- 1 (32 oz) carton chicken broth
- 6 slices bacon, cooked and crumbled
Instructions:
- Preparation:
- Potatoes: No need to thaw the frozen diced potatoes; they can go directly into the crockpot.
- Cream Cheese: Soften the cream cheese by leaving it at room temperature for about 30 minutes before starting the recipe.
- Assembling the Soup:
- Place the frozen diced potatoes into the crockpot.
- Pour the can of cream of chicken soup over the potatoes.

- Bacon Preparation:
- While the soup is cooking, cook the bacon in a skillet over medium heat until it’s crispy.
- Once cooked, transfer the bacon to a paper towel-lined plate to drain excess grease.
- Once cooled, crumble or chop the bacon into small pieces.

- After 4 hours of cooking, check the consistency and flavor of the soup. Adjust the seasoning with salt and pepper if needed.
- Stir in the crumbled bacon, reserving a small amount for garnish if desired.
- Add more cheese at this stage if you want a cheesier soup.
