Creamy Sausage Pasta

Ingredients:

  • 1 diced onion
  • 1-1.5 lbs smoked sausage (such as Johnsonville kielbasa)
  • Garlic, minced (to taste)
  • Salt and pepper (to taste)
  • Italian seasoning (to taste)
  • 2.5 cups chicken broth
  • 1/2 cup heavy whipping cream
  • 1 can (14.5 oz) fire roasted diced tomatoes
  • 12-16 oz pasta (penne or similar)
  • 2.5 cups cheese of your choice (mozzarella, cheddar, pepperjack, etc.)
  • Fresh parsley, chopped (optional, for garnish)

Instructions:

  1. Heat a large pan over medium heat. Add the diced onion and sliced sausage. Cook until the onion becomes translucent and the sausage browns slightly, stirring occasionally.
  2. Add minced garlic, salt, pepper, and Italian seasoning to the pan. Stir and cook for about 1 minute until fragrant.
  3. Pour in the chicken broth, heavy whipping cream, fire roasted tomatoes (including the juices), and pasta. Stir well to combine.
  4. Bring the mixture to a boil, then reduce the heat to medium-low. Cover the pan and simmer for about 20 minutes, stirring occasionally to prevent the pasta from sticking to the bottom of the pan. Cook until the pasta is tender and has absorbed most of the liquid.
  5. Once the pasta is cooked to your liking, add the shredded cheese of your choice to the pan. Stir until the cheese melts and combines with the sauce, creating a creamy texture.
  6. Taste and adjust seasoning if needed. If desired, garnish with freshly chopped parsley for a decorative touch.
  7. Serve hot, and enjoy your creamy sausage pasta!
