Crockpot Cheesy Sausage and Ravioli (or Tortellini)

Ingredients:

  • 48 oz low sodium chicken broth
  • 36 oz frozen cheese ravioli (or tortellini if you prefer)
  • 5 oz fresh spinach
  • 2 cans (14.5 oz) diced tomatoes with green chilies (or diced tomatoes if you prefer less heat)
  • 2 smoked sausages, cut into slices or rounds
  • 2 blocks cream cheese (8 oz each)
  • Salt and pepper, to taste
  • 3 tablespoons Italian seasoning
  • Red pepper flakes, to taste
  • 2 cups shredded mozzarella cheese
  • 1 cup Italian blend cheese (or another cup of mozzarella)
  • Parmesan cheese for garnish

Instructions:

  1. Prepare the Crockpot
  • Set your crockpot on the kitchen counter and spray the inside with a little non-stick cooking spray for easy cleanup.
  1. Layer the Ingredients
  • Dump the following into the crockpot:
    • 48 oz chicken broth
    • 36 oz frozen cheese ravioli (or tortellini)
    • 2 cans of diced tomatoes with green chilies (or diced tomatoes if you want to skip the heat)
    • 2 smoked sausages, cut into pieces
    • 5 oz fresh spinach
    • 2 blocks of cream cheese, cut into chunks (it’ll melt beautifully as it cooks)
    • Salt and pepper to taste
    • 3 tablespoons Italian seasoning
    • Red pepper flakes, to your preferred level of heat
  1. Cook the Dish
  • Stir the ingredients together a bit to help combine everything, but don’t worry about it being perfect. Cover the crockpot with the lid.
