Crockpot Chicken and Stuffing with Broccoli
Ingredients:
- 3-4 boneless, skinless chicken breasts
- 1 can of cream of mushroom soup (or any cream soup you prefer, like cream of chicken)
- 1 bag of frozen broccoli (about 12-16 oz)
- Shredded cheese (about 1 cup, or more depending on preference)
- 1 box of stuffing mix (any kind, such as Stove Top)
- Water or broth (for the stuffing mix)
- Pats of butter (about 2-3 tablespoons)
Instructions:
- Prepare the Chicken:
- Place the chicken breasts at the bottom of the crockpot. They don’t need to be thawed if frozen, but make sure they are spread out evenly in the bottom of the pot.
- Add Soup:
- Pour the cream of mushroom soup directly on top of the chicken. Use a spoon or spatula to spread it evenly over the chicken to cover it completely. The soup helps keep the chicken moist and adds flavor.
- Add Broccoli:
- Spread the frozen broccoli over the top of the soup-covered chicken. No need to thaw the broccoli—just dump it straight in. This will steam as the meal cooks.
- Cheese Layer:
- Sprinkle shredded cheese on top of the broccoli and soup mixture. You can use cheddar, mozzarella, or any cheese you like. The cheese melts as it cooks, adding richness and flavor.
- Prepare the Stuffing:
- In a separate bowl, prepare the stuffing mix according to the package instructions, typically by adding water or broth. Once it’s ready, pour it over the broccoli, cheese, and chicken in the crockpot.
- Top with Butter:
- Dot the top of the stuffing with small pats of butter (2-3 tablespoons). This will help the stuffing stay moist and develop a crispy, golden top as it cooks.
- Cook:
- Set the crockpot to low and cook for about 6 hours. The chicken will become tender and shred easily, and the stuffing will absorb all the flavors from the chicken, soup, and cheese.
- Serve:
- After 6 hours, check to make sure everything is cooked through and the chicken is easily shreddable. If needed, shred the chicken with two forks and stir everything together for a comforting, cheesy meal.

- Shredded Chicken: After cooking, you can shred the chicken and mix everything together, or serve the chicken whole for a different presentation.
- Additional Flavor: You can add herbs or seasoning like garlic powder, onion powder, or even a bit of ranch seasoning to the chicken for extra flavor.
- Moisture: If the stuffing looks dry, add a bit more water or broth to it before cooking. Some prefer a slightly wetter stuffing, while others like it drier and crispier.
