(It’s INCREDIBLE ans easy!)
To your crockpot add:
1 pound chicken tenderloins
48 oz low sodium chicken broth
2 TBSP minced garlic
1/2 cup of sun dried tomatoes and the juices from it. (Chop the tomatoes some)
Salt, pepper
1-2 TBSP Italian seasoning
1/2 TBSP onion powder
Dash or red pepper flakes optional
Cook for around 2 hours on high or until chicken is cooked through.
Shred or chop up chicken then add:
1 cup heavy cream mixed with 2 1/2 TBSP of corn starch. (In a separate bowl) Mix until there aren’t any lumps. Then add to the crockpot.
Add 1 cup shredded Parmesan cheese (or more if you’re a cheese lover)
1 block cream cheese melted for a few minutes in the microwave first.
Now after an hour or so when everything is incorporated add 1-2 cups chopped spinach
Then add your frozen tortellini I did around 3 cups, these only take around 7 minutes to cook. Flip your crockpot to warm and enjoy!
I had this meal finished then went to a practice for a couple hours, came home and it still tasted amazing!
