Crockpot Ranch Pork Chops and Potatoes

Prep Time: 5 minutes
Cook Time: 3-6 hours
Total Time: 3 hours 5 minutes

Ingredients

  • 3 lbs red potatoes, quartered
  • 6 boneless pork chops (3/4 inch thick) or bone-in for extra flavor
  • 1/2 cup olive oil
  • 2 tablespoons dry Ranch seasoning
  • 2 teaspoons apple cider vinegar
  • 2 tablespoons butter, cubed
  • Salt and pepper, to taste

Instructions

1. Optional: Sear Pork Chops

  • Heat a skillet over medium-high heat and lightly coat with olive oil.
  • Sear the pork chops for 2-3 minutes per side until golden brown.

This step enhances flavor but is not required.

2. Make the Ranch Mixture

  • In a small bowl, whisk together the olive oil, Ranch seasoning, and apple cider vinegar.

3. Assemble in the Slow Cooker

  • Place the quartered potatoes into the slow cooker.
  • Layer the pork chops on top of the potatoes.
  • Drizzle the Ranch mixture evenly over the potatoes and pork chops.
  • Add the butter cubes on top for richness.

4. Cook

  • High heat: Cook for 3 hours.
  • Low heat: Cook for 5-6 hours.

Ensure pork chops reach an internal temperature of 145°F (63°C) before serving.

5. Season and Serve

  • Adjust seasoning with salt and pepper as needed.
  • Serve the pork chops alongside the tender potatoes for a hearty, comforting meal.

Tips for Success

  1. Consistency: Cut potatoes into evenly sized pieces for uniform cooking.
  2. Extra Flavor: Add garlic cloves, fresh herbs, or grated Parmesan to the dish for additional flavor.
  3. Leftovers: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently to avoid drying out the pork.

Enjoy your no-fuss, flavorful slow-cooker meal! 🍽️
