Delicious and Super Easy Breakfast Casserole
Ingredients:
- 1 pound of breakfast sausage
- 12 large eggs
- 1/2 cup milk (whole milk preferred for creaminess)
- Salt & pepper to taste
- 3 cups frozen hash browns (thawed, shredded or diced)
- 2 cups shredded cheddar cheese (divided)
Instructions:
- Preheat the Oven:
- Set your oven to 350°F (175°C) and allow it to preheat while you prepare the casserole.
- Cook the Sausage:
- In a large skillet over medium heat, cook the breakfast sausage until browned and fully cooked, breaking it up into crumbles as it cooks. This should take about 7-10 minutes.
- Once the sausage is cooked, drain the excess grease and set the sausage aside.
- In a large mixing bowl, crack the 12 eggs.
- Add 1/2 cup of milk to the eggs.
- Season with salt and pepper to taste (about 1/2 teaspoon of each, or adjust to your preference).
- Whisk the eggs, milk, salt, and pepper together until fully combined and slightly frothy. Set aside.
- Assemble the Casserole:
- Grease a 9×13-inch baking dish with nonstick cooking spray or butter.
- Spread the thawed hash browns evenly across the bottom of the dish to create a flat layer.
- Sprinkle the cooked sausage evenly over the hash browns.
- Add a layer of shredded cheddar cheese, using about 1 cup of the cheese.
- Pour the egg mixture over the sausage and cheese, ensuring it covers everything evenly.
- Sprinkle the remaining 1 cup of shredded cheddar cheese on top.
- Bake the Casserole:
- Cover the baking dish with aluminum foil to prevent the cheese from burning.
- Place the casserole in the preheated oven and bake for 30 minutes.
- After 30 minutes, remove the foil and continue baking for an additional 20 minutes, or until the eggs are set and the top is golden and bubbly.
- To check if it’s done, insert a toothpick or knife into the center; it should come out clean when the eggs are fully cooked.
- Serve:
- Once baked, remove the casserole from the oven and let it rest for about 5 minutes before cutting into squares.
