Ingredients:
- 1 package chicken breasts
- 1 bottle restaurant-style Italian dressing (or Olive Garden, if preferred)
- 1 cup chicken broth
- 1 package cream cheese
- 1 package broccoli (fresh or frozen)
- 1 tbsp Italian seasoning
- 1 box Rotini pasta (or Penne, any pasta shape works)
- 1 bag Italian blend shredded cheese
Instructions:
Step 1: Prepare the Broccoli
- Microwave the broccoli according to the package directions. Once cooked, chop it into smaller pieces. Set aside.
Step 2: Season and Add Chicken
- Place the chicken breasts in the slow cooker. Season them with salt and pepper to taste.
Step 3: Prepare the Sauce
- In a mixing bowl, pour the entire bottle of Italian dressing.
- Fill the empty dressing bottle with 1 cup of chicken broth, close the lid, and shake it well to get any remaining dressing. Add this to the mixing bowl and stir until well combined.
Step 4: Combine Ingredients in Slow Cooker
- Pour the sauce mixture over the chicken breasts in the slow cooker.
- Add the chopped broccoli to the slow cooker.
- Place the block of cream cheese in the center of the mixture.
- Sprinkle the Italian seasoning over the top.
Step 5: Cook
- Set the slow cooker to low and cook for 4 hours or on high for 2 hours.
Step 6: Cook the Pasta
- About 30 minutes before the slow cooker finishes, cook the pasta in a pot of boiling water. Cook it slightly al dente, then drain.
Step 7: Shred Chicken and Combine
- After 4 hours (or 2 hours on high), remove the chicken breasts from the slow cooker and shred them using two forks.
- Return the shredded chicken to the slow cooker, along with the cooked pasta. Stir everything well to combine.
Step 8: Add Cheese
- Sprinkle the shredded Italian blend cheese over the top of the mixture in the slow cooker.
- Cover and let it cook on the warm setting for another 20-30 minutes, allowing the cheese to melt and everything to meld together.
Step 9: Serve and Enjoy!
