« Easy, budget friendly and yet very tasty chicken cream cheese taquitos »

What you’ll need:

• Rotisserie chicken

• (1) 8oz cream cheese (make sure it’s room temp so it’s easier/softer to mix it with other ingredients unless you want some arm workout, go for it. Lol. I’m just trying to be funny so you won’t get bored reading this 😃)

2-3 cups of Mexican blend shredded cheese (could use more, I don’t judge. Who doesn’t love cheese? 🙂 or use your own choice of shredded cheese)

• your choice of tortilla wraps (keto friendly, low-carb, you name it), egg roll wraps work too.

• you can add your own preferred spices. E.g. chilli pepper flakes, taco seasoning, ranch seasoning, etc. Sky’s the limit, this is very flexible. Careful with adding salt (heart friendly advise), you’re using rotisserie chicken anyway so it’s guaranteed tasty already plus all the cheese.

Prep:

1. Shredd that chicken. You may separate white & dark meat if you have family members who prefer eating either or combine them. Again, sky’s the limit. 😉

2. Combine shredded chicken, softened cream cheese, shredded cheese and spices of your choice.

3. Put enough of your cream cheese chicken filling on your choice of tortilla wrap and roll it tight enough. No binder needed. It’ll keep its shape, either you put it in the fridge for few minutes to let it set before pan/air frying, baking them or you can cook it immediately.

• air fryer: spray some cooking oil on them to get a crispy finish and flip it to make sure all sides are evenly brown. 350-400°F, make sure to check to make sure you don’t burn it. It won’t take long cuz it’s already cooked, you’re just basically browning the wrap and melting the cheese. Turn up temp. if needed, air fryer sometimes varies.

•skillet/pan fry: just add cooking oil of your choice, fry that bad boy and enjoy!

• can also be baked, topped with salsa verde and more cheese cuz why not 😅. Won’t be crispy, but hey I’m sure it’s gonna be as good.

Freezing them is also nice. No need to thaw. Just throw them immediately to your air fryer/oven/skillet and enjoy an easy dinner/lunch. Very filling.
