Easy Chicken and Rice Casserole

Ingredients:

  • 1 package of chicken tenderloins (about 1.5 lbs)
  • 2 packs of Knorr Rice Sides (Chicken Fried Rice flavor)
  • 2 cans of cream of chicken soup (10.5 oz each)
  • 1 can of chicken broth (14.5 oz)
  • 2 cups of your favorite shredded cheese (cheddar, mozzarella, or a blend)
  • Salt and pepper to taste
  • Optional: 1 teaspoon garlic powder, 1 teaspoon onion powder

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
  2. Prepare the Baking Dish:
    • Lightly grease a 9×13-inch casserole dish with nonstick cooking spray or a little bit of oil.
  3. Combine Ingredients:
    • Pour the two packs of Knorr Chicken Fried Rice into the casserole dish.
    • Add the two cans of cream of chicken soup.
    • Pour in the can of chicken broth.
    • If desired, season with salt, pepper, garlic powder, and onion powder for added flavor.
    • Mix everything together well until the rice and soups are fully combined.
  4. Add the Chicken:
    • Place the chicken tenderloins on top of the rice mixture, spreading them out evenly.
    • Gently press the chicken into the mixture so that they are partially submerged.
  5. Bake:
    • Cover the casserole dish with aluminum foil.
    • Bake in the preheated oven for 40 minutes.
  6. Add Cheese:
    • After 40 minutes, remove the foil from the casserole dish.
    • Sprinkle the shredded cheese evenly over the top of the casserole.
  7. Final Bake:
    • Return the casserole to the oven and bake uncovered for an additional 10 minutes, or until the cheese is melted and bubbly.
  8. Serve:
    • Remove the casserole from the oven and let it sit for a few minutes to cool slightly.
    • Serve with steamed or roasted broccoli or your favorite vegetable on the side.
