Easy Chicken and Rice Casserole
Ingredients:
- 1 package of chicken tenderloins (about 1.5 lbs)
- 2 packs of Knorr Rice Sides (Chicken Fried Rice flavor)
- 2 cans of cream of chicken soup (10.5 oz each)
- 1 can of chicken broth (14.5 oz)
- 2 cups of your favorite shredded cheese (cheddar, mozzarella, or a blend)
- Salt and pepper to taste
- Optional: 1 teaspoon garlic powder, 1 teaspoon onion powder
Instructions:
- Preheat the Oven:
- Preheat your oven to 350°F (175°C).
- Prepare the Baking Dish:
- Lightly grease a 9×13-inch casserole dish with nonstick cooking spray or a little bit of oil.
- Combine Ingredients:
- Pour the two packs of Knorr Chicken Fried Rice into the casserole dish.
- Add the two cans of cream of chicken soup.
- Pour in the can of chicken broth.
- If desired, season with salt, pepper, garlic powder, and onion powder for added flavor.
- Mix everything together well until the rice and soups are fully combined.
- Add the Chicken:
- Place the chicken tenderloins on top of the rice mixture, spreading them out evenly.
- Gently press the chicken into the mixture so that they are partially submerged.
- Bake:
- Cover the casserole dish with aluminum foil.
- Bake in the preheated oven for 40 minutes.
- Add Cheese:
- After 40 minutes, remove the foil from the casserole dish.
- Sprinkle the shredded cheese evenly over the top of the casserole.
- Final Bake:
- Return the casserole to the oven and bake uncovered for an additional 10 minutes, or until the cheese is melted and bubbly.
- Serve:
- Remove the casserole from the oven and let it sit for a few minutes to cool slightly.
- Serve with steamed or roasted broccoli or your favorite vegetable on the side.
