Fajita Chicken Casserole
Ingredients:
- 4 cups shredded cooked chicken (about 3 large breasts)
- 2 cups instant rice
- 1 (10.5-ounce) can cream of chicken soup
- 1 cup sour cream
- 1 cup frozen diced onion and bell pepper blend
- 1 (10-ounce) can diced tomatoes with chilies (like Ro*Tel), undrained
- 1 1/2 cups chicken broth
- 1 (1.12-ounce) packet fajita seasoning
- 1 (8-ounce) package shredded Mexican blend cheese (about 2 cups)
Instructions:
- Preheat the Oven:
- Preheat your oven to 350°F (175°C).
- Prepare the Casserole Dish:
- Lightly spray a 9×13-inch casserole dish with nonstick cooking spray to prevent sticking.
- Mix the Ingredients:
- In a large mixing bowl, combine the shredded cooked chicken, 2 cups of instant rice, 1 can of cream of chicken soup, 1 cup of sour cream, 1 cup of frozen diced onion and bell pepper blend, 1 can of diced tomatoes with chilies (undrained), 1 1/2 cups of chicken broth, and 1 packet of fajita seasoning.
- Add about half of the shredded Mexican blend cheese (approximately 1 cup) to the mixture.
- Mix all the ingredients until well combined.
- Assemble the Casserole:
- Pour the mixture into the prepared 9×13-inch casserole dish.
- Spread the mixture evenly in the dish to ensure even cooking.
- Bake the Casserole:
- Cover the casserole dish with tin foil to keep the moisture in and to ensure the rice cooks properly.
- Place the dish in the preheated oven and bake for 35 minutes.
- Add the Cheese Topping:
- After 35 minutes, remove the tin foil from the casserole dish.
- Sprinkle the remaining shredded Mexican blend cheese (about 1 cup) evenly over the top of the casserole.
- Final Baking:
- Return the casserole dish to the oven and bake uncovered for an additional 10 minutes, or until the cheese is melted and bubbly.
- Serve:
- Once the casserole is done baking, remove it from the oven and let it sit for a few minutes to set.
