For anyone struggling to find an easy Christmas cookie that won’t break the bank and is 5 mins to throw together I present: toffee shortbread cookies.
1c butter- soft (salted or unsalted, your preference)
3/4c powdered sugar
1/2tsp vanilla extract
2c flour(fluffed)
1/4tsp cinnamon(optional)
1 1/2c toffee pieces with or without chocolate coating. Heath sells bag of just the pieces.
Roll, cut with whatever cookie cutter you have, or roll into a log and slice into 1/4” thick pieces, bake @ 325(conventional) for 11-15 mins depending on your oven.
They are cute, delicious, easy and cheap. There isn’t even resting time in the fridge. People think they take forever and will be impressed by the taste and texture. Hope this helps anyone will last minute cookie needs.
