2 cups ice cream, softened (choose a flavor you like, such as vanilla or birthday cake)
1 ½ cups self-rising flour
If you don’t have self-rising flour, you can make your own by whisking together:
1 ½ cups all-purpose flour
2 ÂĽ teaspoons baking powder
½ teaspoon salt
2 tablespoons rainbow sprinkles, plus more for decorating
Icing:
1 cup powdered sugar
1 tablespoon milk
½ teaspoon vanilla extract
Instructions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). This ensures the oven is ready once your batter is prepared.
Prepare the Loaf Pan:
Spray the inside of a loaf pan with non-stick cooking spray. Alternatively, you can line the pan with parchment paper for easy removal later. Set the prepared pan aside.
Mix the Batter:
In a medium mixing bowl, add the softened ice cream. It’s important that the ice cream is soft but not melted.
Gradually add the self-rising flour to the ice cream. Mix just until combined, avoiding over-mixing to ensure a light texture.
Gently fold in the 2 tablespoons of rainbow sprinkles using a rubber spatula. Mix until the sprinkles are evenly distributed.
Bake the Bread:
Pour the batter into the prepared loaf pan, spreading it out evenly.
Place the pan in the preheated oven and bake for 40 to 45 minutes. Check for doneness by inserting a toothpick into the center; it should come out clean or with a few moist crumbs.
Once done, remove the loaf from the oven and allow it to cool completely in the pan on a wire rack.
Prepare the Icing:
In a small bowl, whisk together 1 cup of powdered sugar, 1 tablespoon of milk, and ½ teaspoon of vanilla extract until smooth. Adjust the consistency if needed: add more powdered sugar to thicken or more milk to thin.
Ice the Bread:
Once the bread has cooled completely, remove it from the pan and place it on a serving platter.
Pour or spread the icing evenly over the top of the loaf.
Immediately sprinkle additional rainbow sprinkles over the icing before it sets.
Allow the icing to set for at least 5 minutes before slicing.
