Funfetti Ice Cream Bread 🍦

Ingredients:

  • 2 cups ice cream, softened (choose a flavor you like, such as vanilla or birthday cake)
  • 1 ½ cups self-rising flour
    • If you don’t have self-rising flour, you can make your own by whisking together:
      • 1 ½ cups all-purpose flour
      • 2 ÂĽ teaspoons baking powder
      • ½ teaspoon salt
  • 2 tablespoons rainbow sprinkles, plus more for decorating

Icing:

  • 1 cup powdered sugar
  • 1 tablespoon milk
  • ½ teaspoon vanilla extract

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). This ensures the oven is ready once your batter is prepared.
  2. Prepare the Loaf Pan:
    • Spray the inside of a loaf pan with non-stick cooking spray. Alternatively, you can line the pan with parchment paper for easy removal later. Set the prepared pan aside.
  3. Mix the Batter:
    • In a medium mixing bowl, add the softened ice cream. It’s important that the ice cream is soft but not melted.
    • Gradually add the self-rising flour to the ice cream. Mix just until combined, avoiding over-mixing to ensure a light texture.
    • Gently fold in the 2 tablespoons of rainbow sprinkles using a rubber spatula. Mix until the sprinkles are evenly distributed.
  4. Bake the Bread:
    • Pour the batter into the prepared loaf pan, spreading it out evenly.
    • Place the pan in the preheated oven and bake for 40 to 45 minutes. Check for doneness by inserting a toothpick into the center; it should come out clean or with a few moist crumbs.
    • Once done, remove the loaf from the oven and allow it to cool completely in the pan on a wire rack.
  5. Prepare the Icing:
    • In a small bowl, whisk together 1 cup of powdered sugar, 1 tablespoon of milk, and ½ teaspoon of vanilla extract until smooth. Adjust the consistency if needed: add more powdered sugar to thicken or more milk to thin.
  6. Ice the Bread:
    • Once the bread has cooled completely, remove it from the pan and place it on a serving platter.
    • Pour or spread the icing evenly over the top of the loaf.
    • Immediately sprinkle additional rainbow sprinkles over the icing before it sets.
    • Allow the icing to set for at least 5 minutes before slicing.
