Mississippi Pot Roast – Detailed Recipe
This slow-cooked, savory roast is a family favorite, perfect for a cozy dinner, and it’s super simple to make in the crock pot.
Ingredients:
- 3-4 lb chuck roast – Look for a well-marbled roast for extra tenderness and flavor.
- 1 packet ranch seasoning mix – Adds that creamy, tangy flavor.
- 1 packet au jus gravy mix – This gives it a rich, beefy taste.
- 1 stick unsalted butter – Adds richness and moisture to the roast.
- 8-10 whole pepperoncini peppers – Provides a slight tang and a bit of heat without being overpowering. You can adjust the number depending on how much pepper flavor you want.
- Optional: ¼ cup pepperoncini juice (from the jar) for a little extra tang (this is optional if you want more flavor).
Instructions:
1. Prepare the Chuck Roast:
- Select a well-marbled chuck roast (3 to 4 pounds) for the best results. The fat content in the roast helps it become extra tender as it slow-cooks.
- Trim excess fat from the roast if desired, but leave enough fat for flavor.
- Pat the roast dry with paper towels to help the seasoning stick better.
2. Season the Roast:
- Place the chuck roast in the bottom of your crock pot (make sure it’s large enough to fit the roast comfortably).
- Sprinkle the entire packet of ranch seasoning evenly over the top of the roast, pressing it lightly into the meat so it sticks.
- Next, sprinkle the au jus gravy mix on top of the ranch seasoning. Make sure to cover the entire surface of the roast evenly.
3. Add the Butter & Peppers:
- Take 1 stick of unsalted butter and cut it into 4-6 pieces.
- Evenly distribute the butter pieces on top of the roast. The butter will melt down during cooking, keeping the roast moist and flavorful.
- Add 8-10 whole pepperoncini peppers (you can use more if you like) around the roast. If you prefer a bit more tang, you can also pour ¼ cup of the pepperoncini juice over the top for extra flavor. Don’t worry about adding any additional liquid—between the butter and the juices from the roast, it will stay plenty moist.
4. Slow Cook:
- Cover the crock pot with the lid and set it to low. Let it cook for 8 hours. This low and slow method allows the meat to become extremely tender and absorb all the flavors from the seasonings and peppers.
- Avoid lifting the lid while it’s cooking to keep all the heat and moisture in the crock pot.
5. Check for Doneness:
- After about 8 hours, check the roast. It should be fork-tender, meaning you can easily shred the meat with a fork. If it’s not falling apart yet, let it cook for another 30-60 minutes.
6. Shred the Roast:
- Once the roast is tender, use two forks to shred the meat directly in the crock pot, mixing it with the buttery, tangy juices at the bottom. Be sure to incorporate the pepperoncinis throughout the shredded meat for even flavor distribution.
Serving Suggestions:
Mashed Potatoes:
- While your roast is finishing up, make some homemade mashed potatoes to serve alongside it.
- Peel and boil 4-5 large russet potatoes until tender (about 20 minutes). Drain and mash with butter, milk, salt, and pepper to taste. The creamy potatoes will complement the rich, shredded roast perfectly.
Corn on the Side:
- Heat up some canned or frozen corn as a quick and simple side. The sweetness of the corn pairs nicely with the savory flavors of the roast.
Gravy Tip:
- If you like extra gravy, scoop out some of the juices from the crock pot and mix with a little cornstarch and water to thicken it. Simmer in a small saucepan until thickened, then drizzle over the roast and potatoes.
Leftovers:
- Reheat in the microwave or stovetop the next day for sandwiches, or serve the shredded roast over a bed of rice or with some pasta for a twist.
- You can also use the shredded roast to make tacos or wraps for a different flavor experience.
Additional Tips:
- Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days or frozen for up to 3 months.
- Spicier Option: If you love heat, you can add a few extra pepperoncini peppers or sprinkle in a dash of red pepper flakes before serving.
Enjoy this classic Mississippi Pot Roast with your family, and savor the tender, flavorful beef. It’s a meal that’s perfect for colder days and hearty appetites!
