This rich and indulgent potato dish is perfect as a crowd-pleasing side that brings loads of flavor and comfort!


Ingredients:

  • 5 lbs russet potatoes, cooked and cubed
  • 1 lb Velveeta cheese, cubed
  • 2 cups mayonnaise
  • 5 strips of bacon, crumbled (or more, if you’re feeling extra generous—I used 12!)
  • Salt and pepper, to taste

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 400°F (200°C).
  2. Prepare the Potatoes:
    • Cook the russet potatoes until fork-tender, then cube them and set aside.
  3. Combine Ingredients:
    • In a large mixing bowl, combine cubed potatoes, Velveeta cheese, mayonnaise, and crumbled bacon. Season with salt and pepper to taste. Stir everything until well mixed.
  4. Bake:
    • Grease a large baking dish and transfer the potato mixture into it.
    • Bake for 45 minutes, or until the top is golden brown and bubbly.
  5. Let Rest and Serve:
    • Allow the dish to rest for about 5 minutes before serving to let the flavors set.
