Taco Soup Recipe
Ingredients:
- 1 can (14.5 oz) diced tomatoes – $0.85
- 1 can (15 oz) corn, drained – $0.61
- ½ carton beef broth (about 2 cups) – $1.29 for a full carton
- 1.3 lbs ground chuck – about $5
- 1 taco seasoning packet – $0.50
- Optional garnish: Sour cream and shredded cheese (if on hand)
Optional Add-ins:
- 1 can (15 oz) black beans, drained
- 1 can (4 oz) green chiles or jalapeños (for extra heat)
- Chopped onions or bell peppers
Instructions:
- Brown the Beef:
- In a large pot or skillet over medium heat, add the ground chuck and break it up with a wooden spoon. Cook until the beef is browned and no longer pink, about 6-8 minutes.
- Drain any excess fat from the pot.
- Strain the Tomatoes and Corn:
- While the beef is browning, strain the liquid from both the diced tomatoes and the corn. This helps keep the soup from being too watery.
- Add Seasoning and Broth:
- Once the beef is browned and drained, add the packet of taco seasoning to the pot. Stir well so the beef is coated with the seasoning.
- Pour in the strained tomatoes, corn, and half a carton of beef broth (about 2 cups).
- Stir to combine all the ingredients.
- Simmer the Soup:
- Bring the soup to a boil over medium-high heat.
- Once boiling, reduce the heat to low. Cover the pot and let the soup simmer for about 20-25 minutes, stirring occasionally to prevent sticking.
- Serve with Garnishes:
- Once the soup is done simmering, taste and adjust seasonings if needed (you can add salt or more taco seasoning).
- For serving, pour your desired portion into a bowl or Tupperware dish.
- Stir in a dollop of sour cream (this adds creaminess) and top with shredded cheese for extra richness.
- Optional Additions:
- For added texture and flavor, feel free to toss in a can of black beans or green chiles. If you prefer spicier, add chopped jalapeños or hot sauce.
Serving Suggestions:
- Serve the soup with tortilla chips for a crunchy side, or crumble them on top of the soup.
- Pair with a side of avocado slices or guacamole for added creaminess and flavor.
Tips:
- Make it Ahead: This soup keeps well in the fridge for up to 3-4 days. The flavors get even better as it sits!
- Freezing: This taco soup freezes well. Just omit any sour cream before freezing, and add it fresh when reheating.
- Customize: You can easily swap or add ingredients like beans, peppers, or extra seasoning for your preferred taste.
Enjoy your simple, delicious Taco Soup! It’s quick, affordable, and perfect for a cozy night in. 🌮🍲
