Hodge Podge Recipe (Hearty Beef and Pasta Stew)
Ingredients:
- 1–2 pounds ground hamburger meat
- For a leaner dish, use 90/10 ground beef or ground turkey as a substitute.
- 3 cans (15 oz each) minestrone soup
- Adds hearty vegetables and pasta, creating a robust base.
- 2 cans (15 oz each) ranch-style beans
- These beans are seasoned with a mild chili sauce, adding depth to the stew.
- Substitute with chili beans or pinto beans if unavailable.
- 2 cans (14.5 oz each) diced tomatoes
- Fire-roasted diced tomatoes can add a smoky flavor if preferred.
- 1 can (10 oz) Rotel tomatoes with green chilies
- Use mild, original, or hot Rotel based on your spice preference.
- For less spice, substitute with plain diced tomatoes.
- 1–2 cups small shell pasta(optional)
- Cook separately and add before serving to avoid overcooking.

- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon seasoned salt (or Cajun seasoning for a kick)
Optional Garnishes
- Shredded cheddar or Parmesan cheese
- Chopped fresh parsley or green onions
- A dollop of sour cream
Tools Needed
- Large skillet for browning the meat
- Large stockpot or slow cooker for combining ingredients
- Mixing spoon
- Ladle for serving
- Colander to drain pasta
Instructions
Step 1: Brown and Season the Meat
- In a large skillet, add the ground beef over medium-high heat.
- Break it up into small crumbles using a wooden spoon or spatula as it cooks.
- Cook until all the meat is browned, and no pink remains (about 7–10 minutes).
- Drain the grease and return the meat to the skillet.
- Sprinkle with salt, pepper, garlic powder, onion powder, and seasoned salt.
- Stir well to coat the meat evenly with seasonings.
Step 2: Prepare the Pasta (Optional)
- If adding pasta, bring a pot of water to a boil, seasoning it with a generous pinch of salt.
- Cook the pasta according to package instructions, usually about 8–10 minutes for shells.
- Drain and set aside.
Step 3: Combine Ingredients
For Stovetop Cooking:
- In a large stockpot, add the browned meat.
- Open all the cans of minestrone soup, ranch-style beans, diced tomatoes, and Rotel.
- Pour the contents (including their liquid) into the pot with the meat.
- Stir thoroughly to combine.
- Add the cooked pasta at this stage if using.
For Slow Cooker Cooking:
- Add the cooked meat to the slow cooker.
- Pour in all the canned ingredients, stirring to combine.
- Stir in the cooked pasta just before serving.
Step 4: Simmer or Slow Cook
Stovetop Method:
- Place the pot over medium heat and bring to a gentle simmer.
- Reduce the heat to low and let it cook for 20–25 minutes, stirring occasionally.
- This allows the flavors to meld together beautifully.
Slow Cooker Method:
- Cover and cook on low for 4–6 hours or high for 2–3 hours.
Step 5: Taste and Adjust Seasoning
- Before serving, taste the stew and adjust seasoning if needed.
- Add a pinch of salt, a splash of hot sauce, or a sprinkle of cayenne pepper for more flavor.
Step 6: Serve and Garnish
- Ladle the hodge podge into bowls while hot.
- Garnish with shredded cheese, fresh parsley, or green onions.
- Serve with a side of warm bread, crackers, or cornbread for a complete meal.
Tips for Success
- Texture Control: Add the pasta just before serving to keep it from becoming mushy.
- Meal Prep: This dish stores well in the fridge for up to 3 days or in the freezer for up to 2 months. Reheat gently on the stovetop or in the microwave.
- Versatility: Add fresh vegetables like diced zucchini, carrots, or celery to boost nutrition.
Enjoy your hearty, comforting Hodge Podge! 😊
