Holiday Butter Cake 🎄

Ingredients

For the Crust:

  • 1 box yellow cake mix (any brand will work, just use the dry mix)
  • 1 large egg, room temperature
  • 1 stick (1/2 cup) melted butter, slightly cooled

For the Topping:

  • 1 lb powdered sugar (approximately 3 3/4 cups)
  • 1 large egg, room temperature
  • 1 (8 oz) block cream cheese, softened to room temperature (full-fat for richness)

Instructions

  1. Preheat the Oven:
  • Preheat your oven to 350°F (175°C).
  • Grease a 13×9-inch baking pan with nonstick spray or a thin layer of butter to prevent sticking.
  1. Prepare the Crust:
  • In a medium bowl, combine the yellow cake mix, 1 egg, and melted butter.
  • Stir until all ingredients are well blended, forming a thick dough.
  • Use a spatula or your hands to press this mixture evenly into the bottom of the prepared pan. Aim for an even layer that covers the entire base.
  1. Make the Creamy Topping:
  • In a separate large mixing bowl, add the powdered sugar, egg, and softened cream cheese.
  • Use an electric mixer on medium speed to beat until smooth and creamy, about 2-3 minutes. Ensure there are no lumps in the mixture, and scrape down the sides of the bowl as needed.
  • Pour this topping over the crust layer in the pan, spreading it out evenly with a spatula so it covers the crust completely.
  1. Bake the Cake:
  • Place the pan in the center of the preheated oven and bake for 35 to 40 minutes. The cake is ready when the topping is set but still slightly gooey in the center. The edges should be light golden brown.
  • Avoid over-baking, as you want a soft, gooey texture in the middle.
  1. Cool & Serve:
  • Let the cake cool in the pan for at least 15 minutes before slicing. This helps the layers set.
  • For a warmer treat, serve right away; for a firmer texture, allow the cake to cool to room temperature.
  • Slice into squares or rectangles and serve with a dusting of powdered sugar on top if desired.
  1. Optional Garnishes:
  • Sprinkle with a dusting of powdered sugar or a pinch of cinnamon for extra holiday flair.
  • For a special touch, drizzle caramel or chocolate sauce on top or add a dollop of whipped cream.

Storage:

  • Leftovers can be stored in an airtight container at room temperature for up to 2 days or refrigerated for up to 5 days.

This cake is rich, soft, and bursting with a creamy sweetness that pairs perfectly with holiday gatherings! Enjoy this indulgent classic with loved ones—it’s the ultimate comfort dessert.
