Homemade Chicken Taquitos

Ingredients:

  • 1 rotisserie chicken (shredded, about $4.98 at Sam’s Club)
  • 1 block (8 oz) cream cheese, softened
  • 1/3 cup sour cream
  • 1/2 cup salsa (mild, medium, or hot based on preference)
  • 1 1/2 cups shredded cheese (cheddar, Mexican blend, or your choice)
  • 10-12 tortillas (flour or corn, depending on preference)
  • Toothpicks (to secure the taquitos while frying)
  • Oil for frying (vegetable or canola oil works well)
  • Additional sour cream or salsa for serving

Instructions:

  1. Prepare the Chicken Filling:
    • Shred the rotisserie chicken into a large mixing bowl, discarding any skin and bones.
    • Add the softened cream cheese, sour cream, and salsa to the shredded chicken.
    • Add the shredded cheese to the mixture.
    • Mix all ingredients together until well combined. The mixture should be creamy and well-incorporated.
  2. Prepare the Tortillas:
    • Take the tortillas and place them on a microwave-safe plate.
    • Cover the tortillas with a damp paper towel to keep them from drying out.
    • Microwave the tortillas for 20-30 seconds to make them pliable and easier to roll.
  3. Assemble the Taquitos:
    • Lay a warmed tortilla flat on a clean surface.
    • Place 2-3 tablespoons of the chicken mixture in the middle of the tortilla, spreading it out in a line, but leaving space at the edges for rolling.
    • Roll the tortilla tightly around the filling, starting from one edge and rolling to the other.
    • Secure the rolled taquito with a toothpick to prevent it from unrolling during frying.
  4. Fry the Taquitos:
    • Heat about 1/4 inch of oil in a large skillet over medium heat. You can test if the oil is ready by dropping a small piece of tortilla in; it should sizzle immediately.
    • Carefully place the taquitos in the hot oil, seam side down first.
    • Fry each side for 2-3 minutes or until golden brown and crispy. Use tongs to turn the taquitos to ensure even cooking on all sides.
    • Once cooked, remove the taquitos from the skillet and place them on a plate lined with paper towels to drain any excess oil.
  5. Serve:
    • Remove the toothpicks from the taquitos.
    • Serve warm with additional sour cream, salsa, or your favorite dipping sauce.

Notes:

  • If you prefer baking over frying, preheat your oven to 425°F (220°C). Place the rolled taquitos on a baking sheet lined with parchment paper, brush them lightly with oil, and bake for 15-20 minutes or until crispy and golden brown.
  • For a buffalo chicken version, replace the salsa with buffalo sauce and add a bit of ranch or blue cheese dressing to the filling.
