HUGE Pot of Chili

Ingredients

  • 1 pound ground beef (or substitute with turkey/chicken)
  • 2 cans beans (your choice: pinto, black, kidney, or white)
  • 2 tablespoons olive oil
  • 1 cup chopped bell peppers (mix colors for vibrant presentation)
  • 1/2 cup chopped onions (diced finely)
  • 2 jalapeño peppers, finely chopped (adjust for heat preference)
  • 2 cans (28 ounces each) crushed tomatoes
  • 2 tablespoons chili powder
  • 1 tablespoon cumin powder
  • 1 tablespoon fresh cilantro, chopped
  • Hot sauce, to taste
  • Salt and pepper, to taste

Instructions

  1. Cook the Protein:
    • In a large Dutch oven or saucepan, heat olive oil over medium-high heat.
    • Add ground beef (or turkey/chicken) and cook until no longer pink. Drain excess grease.
  2. Sauté the Veggies:
    • Stir in bell peppers, onions, and jalapeños.
    • Cook over low heat until the vegetables are tender and fragrant.
  3. Add Core Ingredients:
    • Mix in beans, crushed tomatoes, chili powder, cumin, and cilantro. Stir thoroughly to combine.
  4. Simmer for Flavor:
    • Lower the heat and let the chili simmer, stirring occasionally.
    • Allow the flavors to meld for 30–45 minutes. If it gets too thick, add a bit of water to reach your preferred consistency.
  5. Season and Serve:
    • Adjust salt and pepper to taste.
    • Serve with hot sauce for an extra kick!
