One Pot Goulash Recipe
Ingredients
- 1 pound ground beef – gives a hearty flavor to the dish.
- 1 cup onion, diced – adds a savory base flavor.
- 1 cup green bell pepper, diced – brings a bit of sweetness and crunch.
- 1/2 teaspoon salt – season to taste.
- 1/2 teaspoon black pepper – for a touch of spice.
- 1 tablespoon paprika – gives warmth and depth (smoked paprika would add an extra layer if you like).
- 2 cups elbow macaroni – the classic pasta for goulash.
- 1 can (14.5 oz) diced tomatoes, undrained – use the juices for extra tomato flavor.
- 1 can (15 oz) tomato sauce – thickens the sauce and adds richness.
- 2 cups beef broth – enhances the meaty flavor.
- 1 cup water – to help cook the pasta and adjust thickness as needed.
- 1 teaspoon Worcestershire sauce – adds umami and a hint of tang.
- 1 teaspoon Italian seasoning – gives the dish a subtle herb flavor.
Instructions
- Brown the Ground Beef and Onions:
- In a large pot or Dutch oven, brown the ground beef with the diced onion over medium-high heat, breaking up the beef as it cooks. Cook until the beef is browned and the onion is softened (about 5-7 minutes).
- Drain the grease to remove excess fat and return the beef and onions to the pot.
- Add Green Pepper and Seasonings:
- Add the diced green pepper, salt, pepper, and paprika to the pot. Stir well and cook for another 2-3 minutes, allowing the flavors to meld and the green pepper to soften slightly.
- Add Pasta, Tomatoes, and Liquids:
- Stir in the elbow macaroni, undrained can of diced tomatoes, tomato sauce, beef broth, water, Worcestershire sauce, and Italian seasoning.
- Mix everything together, making sure the macaroni is submerged in the liquid for even cooking.
- Simmer Until Pasta is Tender:
- Bring the mixture to a gentle boil, then reduce the heat to low, covering the pot.
- Let it simmer for about 15-20 minutes, stirring occasionally to prevent sticking, until the macaroni is soft and has absorbed most of the liquid. Add extra water if you prefer a thinner consistency, or cook uncovered if you like a thicker goulash.
- Adjust Seasoning and Serve:
- Taste and adjust seasonings as needed (a little extra salt, pepper, or Worcestershire can bring out more flavor).
- Serve hot and enjoy! It’s great topped with shredded cheese, fresh parsley, or a sprinkle of red pepper flakes for some kick.
Extra Tips:
- Customize with Cheese: Stir in a handful of shredded cheddar or Parmesan at the end for a creamy twist.
- Add Veggies: Throw in some chopped carrots, celery, or even corn to give it a little more texture and flavor.
- Leftovers: This dish makes a generous portion, and it only gets better as leftovers, so enjoy it for lunch the next day!
This is true comfort food – no wonder you went back for three plates! 😊
