My Favorite Casserole: Cabbage Casserole
Ingredients:
- 1 small head of cabbage
- 1 Vidalia onion
- 1 can (10.5 oz) cream of chicken soup
- 1 cup mayonnaise
- 1 1/2 sticks (3/4 cup) melted butter, divided
- 1 cup shredded cheddar cheese
- 1 sleeve Ritz crackers (about 30 crackers), crushed
Instructions:
- Preheat and Prepare:
- Preheat your oven to 350°F (175°C).
- Spray a 9×13-inch baking dish with non-stick cooking spray (such as Pam).
- Prepare the Vegetables:
- Cut the small head of cabbage into bite-sized pieces and evenly spread them in the bottom of the prepared baking dish.
- Dice the Vidalia onion and sprinkle it evenly over the cabbage.
- Prepare the Soup Mixture:
- In a medium bowl, combine the can of cream of chicken soup, 1 cup of mayonnaise, and 1/2 stick (1/4 cup) of melted butter. Mix well until fully combined.
- Spoon the soup mixture evenly over the cabbage and onions, spreading it out with a spatula to ensure all the vegetables are covered.
- Prepare the Topping:
- In another medium bowl, combine 1 stick (1/2 cup) of melted butter, 1 cup of shredded cheddar cheese, and the crushed Ritz crackers. Mix well until the ingredients are evenly distributed.
- Sprinkle the cracker and cheese mixture evenly over the top of the casserole.
- Bake:
- Place the casserole in the preheated oven and bake for 45 minutes, or until the top is golden brown and the casserole is bubbly.
- Serve:
- Remove the casserole from the oven and let it cool for a few minutes before serving. Enjoy!
