My Favorite Casserole: Cabbage Casserole

Ingredients:

  • 1 small head of cabbage
  • 1 Vidalia onion
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup mayonnaise
  • 1 1/2 sticks (3/4 cup) melted butter, divided
  • 1 cup shredded cheddar cheese
  • 1 sleeve Ritz crackers (about 30 crackers), crushed

Instructions:

  1. Preheat and Prepare:
    • Preheat your oven to 350°F (175°C).
    • Spray a 9×13-inch baking dish with non-stick cooking spray (such as Pam).
  2. Prepare the Vegetables:
    • Cut the small head of cabbage into bite-sized pieces and evenly spread them in the bottom of the prepared baking dish.
    • Dice the Vidalia onion and sprinkle it evenly over the cabbage.
  3. Prepare the Soup Mixture:
    • In a medium bowl, combine the can of cream of chicken soup, 1 cup of mayonnaise, and 1/2 stick (1/4 cup) of melted butter. Mix well until fully combined.
    • Spoon the soup mixture evenly over the cabbage and onions, spreading it out with a spatula to ensure all the vegetables are covered.
  4. Prepare the Topping:
    • In another medium bowl, combine 1 stick (1/2 cup) of melted butter, 1 cup of shredded cheddar cheese, and the crushed Ritz crackers. Mix well until the ingredients are evenly distributed.
    • Sprinkle the cracker and cheese mixture evenly over the top of the casserole.
  5. Bake:
    • Place the casserole in the preheated oven and bake for 45 minutes, or until the top is golden brown and the casserole is bubbly.
  6. Serve:
    • Remove the casserole from the oven and let it cool for a few minutes before serving. Enjoy!
