No-Bake Protein Bites Recipe

Ingredients:

  • 2 cups rolled oats
  • 1 cup Rice Krispies cereal
  • 1 cup peanut butter (creamy or chunky, as preferred)
  • 2/3 cup honey
  • 2 teaspoons vanilla extract
  • 1/2 cup chocolate chips (optional)
  • 1/2 cup mini marshmallows (optional)

Instructions:

  1. Prepare Your Ingredients:
  • Measure out all the ingredients and have them ready to combine. If you’re using chocolate chips and marshmallows, set them aside for later.
  1. Mix Dry Ingredients:
  • In a large mixing bowl, combine 2 cups of rolled oats and 1 cup of Rice Krispies cereal. Stir them together to ensure they’re evenly mixed.
  1. Heat Wet Ingredients:
  • In a medium saucepan over low heat, combine 1 cup of peanut butter and 2/3 cup of honey. Stir constantly until the mixture is smooth and well-blended. Remove from heat.
  1. Add Vanilla:
  • Stir in 2 teaspoons of vanilla extract into the peanut butter and honey mixture.
  1. Combine Mixtures:
  • Pour the wet mixture over the dry ingredients in the large bowl. Stir thoroughly until all the oats and Rice Krispies are coated with the peanut butter and honey mixture.
  1. Add Optional Ingredients:
  • If using, fold in 1/2 cup of chocolate chips and 1/2 cup of mini marshmallows. Ensure they are evenly distributed throughout the mixture.
  1. Shape the Bites:
  • Use a cookie scoop or tablespoon to scoop out portions of the mixture and roll them into balls with your hands. Place each ball onto a greased baking sheet or parchment-lined tray.
  1. Chill the Bites:
  • Once all the bites are formed, place the tray in the refrigerator. Chill for at least 30 minutes to allow the bites to firm up.
  1. Store the Bites:
  • After they are set, transfer the protein bites to an airtight container. They can be stored in the refrigerator for up to a week.
