Ingredients:
- 2 cups rolled oats
- 1 cup Rice Krispies cereal
- 1 cup peanut butter (creamy or chunky, as preferred)
- 2/3 cup honey
- 2 teaspoons vanilla extract
- 1/2 cup chocolate chips (optional)
- 1/2 cup mini marshmallows (optional)
Instructions:
- Prepare Your Ingredients:
- Measure out all the ingredients and have them ready to combine. If you’re using chocolate chips and marshmallows, set them aside for later.
- Mix Dry Ingredients:
- In a large mixing bowl, combine 2 cups of rolled oats and 1 cup of Rice Krispies cereal. Stir them together to ensure they’re evenly mixed.
- Heat Wet Ingredients:
- In a medium saucepan over low heat, combine 1 cup of peanut butter and 2/3 cup of honey. Stir constantly until the mixture is smooth and well-blended. Remove from heat.
- Add Vanilla:
- Stir in 2 teaspoons of vanilla extract into the peanut butter and honey mixture.
- Combine Mixtures:
- Pour the wet mixture over the dry ingredients in the large bowl. Stir thoroughly until all the oats and Rice Krispies are coated with the peanut butter and honey mixture.
- Add Optional Ingredients:
- If using, fold in 1/2 cup of chocolate chips and 1/2 cup of mini marshmallows. Ensure they are evenly distributed throughout the mixture.
- Shape the Bites:
- Use a cookie scoop or tablespoon to scoop out portions of the mixture and roll them into balls with your hands. Place each ball onto a greased baking sheet or parchment-lined tray.
- Chill the Bites:
- Once all the bites are formed, place the tray in the refrigerator. Chill for at least 30 minutes to allow the bites to firm up.
- Store the Bites:
- After they are set, transfer the protein bites to an airtight container. They can be stored in the refrigerator for up to a week.
Notes:
- The recipe makes approximately 34 bites, though this number can vary depending on the size of the bites.
- These protein bites make for a great snack for kids throughout the day or a quick energy boost for adults.
