Pancake Mix Coffee Cake with Streusel Topping
Ingredients
Cake:
- 4 cups pancake mix
- 1/3 cup granulated sugar
- 3/4 cup milk
- 2 large eggs
- 1/2 cup sour cream
- 2 teaspoons vanilla extract
Crumb Topping:
- 1 cup pancake mix
- 1 cup brown sugar
- 1 1/2 teaspoons cinnamon
- 1/8 teaspoon nutmeg
- 1/8 teaspoon salt
- 1/2 cup (1 stick) softened butter
Icing:
- 3 cups powdered sugar
- 1/3 cup butter
- 1 1/2 teaspoons vanilla
- 1-2 tablespoons milk
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C). Spray a 9×13-inch baking dish with nonstick cooking spray and set aside.
- Prepare the Cake Batter:
- In a large bowl, whisk together 4 cups of pancake mix and 1/3 cup of granulated sugar until well combined.
- In a separate medium bowl, mix together 3/4 cup of milk, 2 large eggs, 1/2 cup of sour cream, and 2 teaspoons of vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix. Set the batter aside.
- Make the Crumb Topping:
- In another bowl, combine 1 cup of pancake mix, 1 cup of brown sugar, 1 1/2 teaspoons of cinnamon, 1/8 teaspoon of nutmeg, and 1/8 teaspoon of salt.

- Assemble the Coffee Cake:
- Pour the cake batter into the prepared 9×13-inch baking dish, spreading it evenly.

- Bake the Coffee Cake:
- Place the dish in the preheated oven and bake for 45 minutes to 1 hour, or until a toothpick inserted into the center comes out clean.
- If the top starts to brown too quickly, you can cover it loosely with aluminum foil during the last 15 minutes of baking.
- Prepare the Icing:
- In a small bowl, whisk together 3 cups of powdered sugar, 1/3 cup of melted butter, 1 1/2 teaspoons of vanilla extract, and 1-2 tablespoons of milk until smooth and pourable. Adjust the consistency with more milk if needed.
- Finish and Serve:
- Once the coffee cake is done baking, remove it from the oven and let it cool slightly in the dish.
- Drizzle the prepared icing over the warm cake.
- Allow the icing to set before slicing and serving.
