Pancake Muffins and Donuts with Cereal

Ingredients:

For the Batter:

  • 2 cups pancake mix
  • 1 1/3 cups water
  • 1 cup cereal (e.g., Fruity Pebbles)

For the Glaze:

  • 1 1/2 cups powdered sugar
  • 3 tablespoons milk
  • 1-2 teaspoons vanilla extract

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 400°F (200°C).
  2. Prepare the Batter:
    • In a large mixing bowl, combine 2 cups of pancake mix with 1 1/3 cups of water. Stir until the mixture is smooth and free of lumps.
    • Gently fold in 1 cup of your chosen cereal, mixing until evenly distributed.
  3. Grease the Pans:
    • Lightly grease your muffin and donut pans with nonstick spray or a thin layer of oil.
  4. Fill the Pans:
    • For muffins: Spoon about a tablespoon of batter into each cavity of the muffin pan.
    • For donuts: Add enough batter to fill the bottom of each donut mold.
  5. Bake:
    • Place the pans in the preheated oven and bake for approximately 10 minutes, or until a toothpick inserted into the center comes out clean.
  6. Make the Glaze:
    • While the muffins and donuts are baking, prepare the glaze. In a medium mixing bowl, whisk together 1 1/2 cups of powdered sugar, 3 tablespoons of milk, and 1-2 teaspoons of vanilla extract until smooth.
  7. Cool and Glaze:
    • Once the muffins and donuts are done baking, remove them from the oven and let them cool in the pan for about 5 minutes.
    • Turn the donuts out of the pan and dip the tops into the glaze, then place them on a wire rack to set. For the muffins, you can either dip the tops in the glaze or drizzle it over them.
  8. Add Extra Cereal:
    • Sprinkle additional cereal on top of the glazed muffins and donuts for extra crunch and decoration.
  9. Freezing and Reheating:
    • These treats freeze well. Place the cooled muffins and donuts in a freezer-safe ziplock bag and store them in the freezer.
    • To enjoy later, microwave the frozen muffins or donuts for about 30 seconds or until warmed through.

  • Experiment with different cereals for variety.
  • Add a few drops of food coloring to the glaze for a fun, colorful twist.
