Ingredients:

Batter:

  • 2 cups pancake mix
  • 1 1/3 cups water
  • 1 cup cereal (e.g., Fruity Pebbles or any cereal of your choice)

Glaze:

  • 1 1/2 cups powdered sugar
  • 3 tablespoons milk
  • 1-2 teaspoons vanilla extract

Additional Topping:

  • Extra cereal for topping

Instructions:

  1. Preparation:
    • Preheat your oven to 400°F (200°C).
    • Grease your muffin pan and donut pan with non-stick spray or butter.
  2. Prepare the Batter:
    • In a mixing bowl, combine the pancake mix and water. Mix until smooth.
    • Gently fold in 1 cup of cereal into the batter until evenly distributed.
  3. Baking:
    • Fill the muffin pan with about a tablespoon of batter in each cup, filling them about halfway.
    • Pour the batter into the donut pan, filling the bottom of each donut mold.
  4. Bake:
    • Bake in the preheated oven at 400°F (200°C) for approximately 10 minutes, or until the muffins and donuts are golden brown and cooked through. Use a toothpick inserted into the center to check for doneness.
  5. Prepare the Glaze:
    • While the muffins and donuts are baking, prepare the glaze. In a bowl, whisk together powdered sugar, milk, and vanilla extract until smooth. Adjust the consistency by adding more milk if too thick, or more powdered sugar if too thin.
  6. Glazing:
    • Allow the baked muffins and donuts to cool in the pan for about 5 minutes.
    • Carefully remove them from the pan and dip each muffin and donut into the glaze, coating them evenly.
    • Sprinkle additional cereal on top of the glaze while it’s still wet to add extra crunch and flavor.
