Peanut Butter Balls

Ingredients:
- 1 cup (250g) creamy peanut butter
- 1/2 cup (115g) unsalted butter, softened
- 3-4 cups (360-480g) powdered sugar, sifted
- 1 teaspoon vanilla extract
- 2 cups (350g) chocolate chips, for coating (optional)
Directions:
- In a large bowl, cream together the peanut butter and butter using an electric mixer on medium speed until smooth and well combined, about 2-3 minutes.
- Gradually add the sifted powdered sugar to the peanut butter mixture, one cup at a time, mixing on low speed until fully incorporated. The dough should be firm and not sticky. If needed, add more powdered sugar until the desired consistency is reached.
- Add the vanilla extract to the dough and mix until evenly distributed.
- Line a baking sheet with parchment paper. Using a small cookie scoop or a tablespoon, portion out the dough and roll each piece into a smooth ball. Place the balls on the prepared baking sheet.
- (Optional) If coating the balls with chocolate, melt the chocolate chips using a double boiler or microwave. For the microwave method, heat the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring between each interval, until completely melted and smooth.
- Using a fork or dipping tool, dip each peanut butter ball into the melted chocolate, ensuring it is fully coated. Gently tap the fork on the side of the bowl to remove excess chocolate, and place the coated ball back on the lined baking sheet. Repeat with the remaining balls.
- Refrigerate the peanut butter balls for at least 30 minutes or until the chocolate has set.
- Store the peanut butter balls in an airtight container in the refrigerator for up to 2 weeks, or in the freezer for up to 2 months.
Tips:
- For a smoother texture, use a food processor to blend the peanut butter and butter before adding the powdered sugar.
