Pepperoni Pizza Lasagna Rollups
Ingredients:
- 12 lasagna noodles
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 40-50 pepperoni slices
- 2 cups pasta or pizza sauce (divided)
- 1 tablespoon olive oil (for greasing the baking dish)
- 1 teaspoon dried oregano (optional)
- 1 teaspoon garlic powder (optional)
- 1 teaspoon Italian seasoning (optional)
- Fresh basil leaves (for garnish, optional)
Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C).
- Cook Lasagna Noodles: Bring a large pot of salted water to a boil. Add lasagna noodles and cook according to the package instructions, typically 8-10 minutes, until al dente. Be careful not to overcook them as they will become too soft and may fall apart. Drain the noodles and lay them flat on a baking sheet to prevent sticking.
- Prepare Ricotta Mixture (Optional): If you prefer a more seasoned filling, mix the ricotta cheese with dried oregano, garlic powder, and Italian seasoning. This step is optional but adds extra flavor.
- Assemble Rollups:
- Lay each cooked lasagna noodle flat on a clean surface.
- Spread approximately 2-3 tablespoons of ricotta cheese evenly over each noodle.
- Place 3-4 pepperoni slices on top of the ricotta cheese layer.
- Roll Up Noodles: Carefully roll up each lasagna noodle starting from one end and rolling towards the other end to form a tight roll.
- Prepare Baking Dish: Grease a 9×13-inch glass baking dish with olive oil. Spread a light layer (about 1/2 cup) of pasta or pizza sauce along the bottom of the dish.
- Arrange Rollups: Place each lasagna rollup seam-side down in the prepared baking dish. Make sure they are close together but not overlapping.
- Top with Sauce and Cheese:
- Pour the remaining pasta or pizza sauce evenly over the top of the lasagna rollups.
- Sprinkle the shredded mozzarella cheese over the sauce.
