Quick and Cheap Breakfast/Snack: DIY Bagel Minis

We LOVE Dunkin Donuts bagel minis, but for the price and size, I’d rather make my own! Here’s a detailed recipe to make these delicious snacks at home. In the next batch, I plan to add some chopped cooked hot honey bacon and try strawberry cream cheese too!

Ingredients:

  • 1 bag of Rhodes Yeast Dinner Rolls
  • Cream cheese (plain or flavored)
  • 1 egg (for the egg wash)
  • Everything but the Bagel seasoning (optional)
  • Chopped cooked hot honey bacon (optional)
  • Strawberry cream cheese (optional)

Equipment:

  • Cupcake pan
  • Spoon (toddler-sized spoon works great)

Instructions:

  1. Prepare the Dough:
    • Take out the desired number of Rhodes Yeast Dinner Rolls from the bag and place them on a baking sheet. Cover them with plastic wrap or a clean kitchen towel.
    • Let the rolls rise at room temperature until they have doubled in size. This might take a few hours, so plan accordingly.
  2. Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
  3. Fill the Rolls:
    • Once the rolls have risen, take one roll at a time and make a dent in the middle using your fingers or the back of a spoon.
    • Add a tablespoon (or more if you prefer) of cream cheese into the dent. If you’re using a toddler spoon, it works perfectly for this step.
    • Optionally, add a bit of chopped cooked hot honey bacon or use strawberry cream cheese for a variation.
  4. Seal the Rolls:
    • Pull the edges of the dough over the cream cheese filling.
    • Use a squeeze-and-twist motion to seal the edges tightly so that the cream cheese doesn’t leak out during baking.
    • Place the filled and sealed roll seam-side down into a cupcake pan.
  5. Egg Wash and Season:
    • In a small bowl, beat the egg to make an egg wash.
    • Brush the tops of each roll with the egg wash.
    • If desired, sprinkle Everything but the Bagel seasoning on top for extra flavor.
  6. Bake:
    • Place the cupcake pan in the preheated oven.
    • Bake for 16 minutes or until the tops are golden brown.
  7. Serve:
    • Allow the bagel minis to cool for a few minutes before serving. Enjoy them warm for the best taste!

These homemade bagel minis are a great quick and cheap breakfast or snack option. Customize them with your favorite fillings and toppings to make them your own!
