Quick One Pot Chicken and Noodles

Ingredients:

  • 1 whole rotisserie chicken, shredded (or 3 large chicken breasts)
  • 4 cups chicken broth (can use bouillon cubes)
  • 1 cup water
  • 2 cans (10.5 oz each) cream of chicken soup
  • 1/2 cup (1 stick) unsalted butter (if using salted butter, reduce salt to 1/2 tsp)
  • 1/2 bag frozen carrots (about 8 oz)
  • 1/2 tsp salt (1 tsp if using unsalted butter)
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 Tbsp dried parsley
  • 1 (12 oz) bag egg noodles
  • 2 Tbsp olive oil (if using chicken breasts)

Instructions:

  1. Prepare the Chicken:
    • If using a whole rotisserie chicken, remove the skin and bones, then shred the meat. Set aside.
    • If using chicken breasts, heat 2 tablespoons of olive oil in a 5-quart pot over medium heat. Cook the chicken breasts until fully cooked, about 6-7 minutes per side. Remove from the pot and shred the chicken. Set aside.
  2. Prepare the Broth:
    • In the same 5-quart pot, bring 4 cups of chicken broth and 1 cup of water to a boil. If using bouillon cubes, dissolve them in the water as per package instructions.
  3. Combine Ingredients:
    • Once the broth is boiling, reduce the heat to a simmer.
    • Add the 1/2 cup of butter to the pot and let it melt.
    • Add the salt, black pepper, garlic powder, onion powder, and dried parsley to the pot.
    • Whisk in both cans of cream of chicken soup until the mixture is smooth and well combined.
  4. Add Vegetables and Chicken:
    • Stir in the frozen carrots.
    • Add the shredded chicken to the pot.
  5. Cook the Noodles:
    • Bring the mixture back to a boil.
    • Add the egg noodles to the pot and cook for 5 minutes.
    • Reduce the heat to a simmer and continue cooking for another 15-20 minutes, or until the egg noodles are tender and fully cooked.
  6. Serve:
    • Serve hot with French bread on the side.

Additional Tips:

  • Feel free to add other vegetables like peas, broccoli, or celery for added nutrition and flavor.
  • For a variation, you can use cream of mushroom soup instead of cream of chicken soup.
  • This recipe makes about 5-6 servings. If you need a smaller portion, you can easily cut all the ingredients in half.
