Quick One Pot Chicken and Noodles
Ingredients:
- 1 whole rotisserie chicken, shredded (or 3 large chicken breasts)
- 4 cups chicken broth (can use bouillon cubes)
- 1 cup water
- 2 cans (10.5 oz each) cream of chicken soup
- 1/2 cup (1 stick) unsalted butter (if using salted butter, reduce salt to 1/2 tsp)
- 1/2 bag frozen carrots (about 8 oz)
- 1/2 tsp salt (1 tsp if using unsalted butter)
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 Tbsp dried parsley
- 1 (12 oz) bag egg noodles
- 2 Tbsp olive oil (if using chicken breasts)
Instructions:
- Prepare the Chicken:
- If using a whole rotisserie chicken, remove the skin and bones, then shred the meat. Set aside.
- If using chicken breasts, heat 2 tablespoons of olive oil in a 5-quart pot over medium heat. Cook the chicken breasts until fully cooked, about 6-7 minutes per side. Remove from the pot and shred the chicken. Set aside.
- Prepare the Broth:
- In the same 5-quart pot, bring 4 cups of chicken broth and 1 cup of water to a boil. If using bouillon cubes, dissolve them in the water as per package instructions.
- Combine Ingredients:
- Once the broth is boiling, reduce the heat to a simmer.
- Add the 1/2 cup of butter to the pot and let it melt.
- Add the salt, black pepper, garlic powder, onion powder, and dried parsley to the pot.
- Whisk in both cans of cream of chicken soup until the mixture is smooth and well combined.
- Add Vegetables and Chicken:
- Stir in the frozen carrots.
- Add the shredded chicken to the pot.
- Cook the Noodles:
- Bring the mixture back to a boil.
- Add the egg noodles to the pot and cook for 5 minutes.
- Reduce the heat to a simmer and continue cooking for another 15-20 minutes, or until the egg noodles are tender and fully cooked.
- Serve:
- Serve hot with French bread on the side.
Additional Tips:
- Feel free to add other vegetables like peas, broccoli, or celery for added nutrition and flavor.
- For a variation, you can use cream of mushroom soup instead of cream of chicken soup.
- This recipe makes about 5-6 servings. If you need a smaller portion, you can easily cut all the ingredients in half.
