Sausage and Rotini Pasta Recipe

Ingredients

  • 2 packs hot smoked sausage – $2.50 (from Dollar Tree)
  • 12 oz rotini pasta – $1.79
  • 1 can cream of chicken soup with herbs – $1.66
  • 1 can cream of mushroom soup – $1.66
  • 1/2 medium onion, sliced – $1.58
  • 1/2 cup reserved pasta water
  • Seasoning: Kinder’s Caramelized Onion Butter seasoning (optional, for added flavor)

Instructions

1. Prep Ingredients:

  • Slice the sausage into thin rounds.
  • Slice half an onion.

2. Cook the Pasta:

  • Cook the rotini pasta according to the package directions. Make sure to add a pinch of salt to the boiling water.
  • When pasta is done, reserve 1/2 cup of the pasta water before draining. Set pasta aside.

3. Cook the Sausage and Onions:

  • In a large skillet over medium heat, add the sliced sausage and cook until it begins to brown, about 5-7 minutes.
  • Add the sliced onions to the skillet with the sausage, stirring occasionally, until onions are softened and translucent, about 3-5 minutes.
  • Season with Kinder’s Caramelized Onion Butter seasoning or any other seasoning you prefer.

4. Add Creamy Sauce:

  • Lower the heat to medium-low and add the cream of chicken with herbs and cream of mushroom soups to the skillet.
  • Stir until the soups combine with the sausage and onion.
  • Slowly add 1/2 cup of reserved pasta water to thin out the sauce slightly, stirring until well mixed. Add more pasta water if you prefer a thinner consistency.

5. Combine with Pasta:

  • Add the cooked rotini pasta to the skillet, tossing well to coat the pasta in the creamy sauce.
  • Continue cooking for an additional 2-3 minutes to ensure everything is well combined and heated through.

6. Serve:

  • Serve warm and enjoy! This meal stores well in the fridge for easy lunches throughout the week.

Tips

  • Seasoning Options: The Kinder’s seasoning adds a nice depth, but if you don’t have it, try seasoning with garlic powder, black pepper, or smoked paprika.
  • Add Vegetables: For extra flavor and nutrition, add in vegetables like bell peppers, mushrooms, or spinach when cooking the onions.

This hearty pasta is not only satisfying but also easy on the wallet and perfect for batch-cooking!
