Sausage & Cheese Bites

Ingredients:

  • 2 cups Bisquick mix
  • 1 pound breakfast sausage
  • 1 ½ cups shredded cheddar cheese
  • ⅓ cup milk
  • 2 tablespoons chopped chives

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Cook the Sausage:
    • In a large skillet, cook the breakfast sausage over medium heat until browned and fully cooked, about 8-10 minutes. Use a spatula to break the sausage into small crumbles as it cooks. Once done, drain the excess fat and transfer the sausage to a plate lined with paper towels to cool.
  3. Prepare the Dough:
    • In a large mixing bowl, combine the Bisquick mix and shredded cheddar cheese. Mix well.
    • Add the cooled sausage crumbles to the bowl and mix again.
    • Pour in the milk and add the chopped chives. Stir until all ingredients are evenly combined and a dough forms. If the mixture is too dry, you can add a little more milk, one tablespoon at a time, until the dough comes together.
  4. Form the Bites:
    • Using your hands or a small cookie scoop, form the dough into 1-inch balls. Place each ball on the prepared baking sheet, spacing them about 1 inch apart.
  5. Bake:
    • Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the sausage bites are golden brown and cooked through.
  6. Serve:
    • Remove from the oven and let them cool on the baking sheet for a few minutes before transferring to a serving platter.
    • Serve warm and enjoy!

These Sausage & Cheese Bites make a great appetizer or snack. Enjoy them with your favorite dipping sauce, if desired.
