Sheet Pan Kielbasa, Green Beans, & Potatoes

Ingredients

  • 1 (12 oz) bag frozen green beans
    • Alternative: Fresh green beans for a firmer texture. If using fresh, trim the ends.
  • 1 package of kielbasa (about 12-14 oz)
    • Cutting Option: Slice into 1/4-inch thick rounds, or halve the rounds for more even browning.
  • 3 Yukon gold potatoes
    • Preparation: Wash thoroughly, leaving the skin on for added texture, or peel if preferred. Dice into 1-inch cubes for even cooking.
  • 2 tablespoons avocado oil
    • Substitutes: Olive oil, canola oil, or melted butter for a richer flavor.
  • Seasonings (to taste):
    • Salt and black pepper
    • Garlic powder (~1 teaspoon)
    • Onion powder (~1 teaspoon)
    • Optional:
      • Smoked paprika for a subtle smoky flavor.
      • Italian seasoning for a herby twist.
      • Red pepper flakes for some heat.

Optional Additions:

  • Cherry tomatoes: Toss them in during the last 10 minutes for a juicy pop of flavor.
  • Carrots: Thinly sliced rounds can be added to the mix.
  • Parmesan cheese: Sprinkle over the dish during the last few minutes of cooking for a savory finish.

Instructions

Step 1: Preheat Oven

Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or aluminum foil for easy cleanup.


Step 2: Prep Ingredients

  1. Green Beans:
    • If using frozen, thaw slightly by running under cool water. Pat dry with a clean kitchen towel or paper towels.
  2. Kielbasa:
    • Slice into uniform pieces (~1/4 inch thick) for even cooking. Halve the slices for smaller bites, if desired.
  3. Potatoes:
    • Dice into 1-inch cubes. Smaller pieces will roast faster and crisp up better.

Step 3: Combine Ingredients

  1. In a large mixing bowl, combine the potatoes, green beans, and sliced kielbasa.
  2. Drizzle the avocado oil over the mixture.
  3. Sprinkle with seasonings (salt, pepper, garlic powder, onion powder, etc.). Toss until everything is evenly coated.

Step 4: Spread on Sheet Pan

  • Arrange the mixture in an even layer on the prepared baking sheet. Avoid overcrowding to allow for proper roasting. Use two pans if necessary.

Step 5: Roast

  • Place the baking sheet in the preheated oven. Roast for 30 minutes, stirring halfway through for even browning.
  • Check for doneness:
    • Potatoes should be golden and fork-tender.
    • Kielbasa should have crispy, caramelized edges.
    • Green beans should be tender but not mushy.
