Sloppy Burritos (or Enchiladas)

Ingredients:

  • 1 lb ground beef (or turkey) – This is for your taco meat. You can also use ground chicken or pork if you prefer.
  • 1 packet taco seasoning – Or use homemade seasoning (chili powder, garlic powder, cumin, onion powder, salt, and pepper).
  • 1 can refried beans – You can use traditional, black bean, or pinto beans depending on your preference.
  • 2 cups shredded cheese – I recommend a Mexican blend of cheeses (cheddar, Monterey Jack, etc.).
  • 10 large flour tortillas – Soft taco-sized or burrito-sized, depending on how big you want them.
  • 1 can enchilada sauce – Choose red or green sauce depending on your preference.
  • 1 cup queso (mild or spicy) – For drizzling and making these extra creamy.
  • Extra shredded cheese – For topping (about 2 cups more).
  • Optional: Sautéed onions, bell peppers, or even some hot sauce to spice it up!

Instructions:

Step 1: Prepare the Taco Meat

  1. Brown the Ground Meat:
    • In a large skillet, heat a little bit of olive oil over medium-high heat and add the ground beef (or your choice of meat). Cook, breaking it apart with a spoon until fully browned, about 5-7 minutes.
  2. Season the Meat:
    • Drain any excess grease, then sprinkle in your taco seasoning (or homemade mix) and stir. Add about ½ cup of water to help the seasoning spread evenly. Simmer for a few minutes until the water evaporates and the meat is well-coated in the seasoning.

Step 2: Assemble the Burritos
