Ingredients:
- 8 cups chicken broth (store-bought or homemade) or substitute with 8 bouillon cubes dissolved in 8 cups of water
- 1 lb boneless skinless chicken breasts or thighs
- 1½ cups celery, sliced
- 1½ cups carrots, sliced
- ½ cup yellow onion, diced
- 1 tsp minced garlic (or 1 tsp garlic powder)
- ¼ tsp black pepper
- Salt, to taste (add at the end)
- 1 package egg noodles, cooked according to package directions (usually around 12 oz)
Instructions:
Step 1: Prep the Ingredients
- Slice the vegetables: Slice the celery and carrots into thin pieces, and dice the yellow onion. Mince the garlic if you’re using fresh garlic.
Step 2: Add Ingredients to the Slow Cooker
- Combine in slow cooker: Place the 8 cups of chicken broth, 1 lb chicken breasts or thighs, sliced celery, sliced carrots, diced onion, 1 tsp minced garlic, and ¼ tsp black pepper into the slow cooker.
- Cover and cook: Set your slow cooker to LOW and cook for 8 hours. If you’re in a hurry, you can also cook on HIGH for 4 hours.
Step 3: Cook the Noodles
- Prepare noodles: When you’re close to the end of the cooking time, boil water in a large pot and cook the egg noodles according to the package instructions. Drain the noodles once they’re cooked.
Step 4: Shred the Chicken
- Shred the chicken: After the slow cooker has finished, carefully remove the chicken from the broth. Use two forks to shred the chicken into bite-sized pieces.
- Return the chicken: Add the shredded chicken back into the slow cooker and stir to combine.
Step 5: Add Noodles and Season
- Combine noodles and soup: Add the cooked and drained egg noodles to the slow cooker, stirring them into the soup.
- Taste for seasoning: Taste the soup and add salt as needed. Adjust the pepper if desired.
Step 6: Serve
- Serve: Ladle the soup into bowls and enjoy this comforting, flavorful chicken noodle soup.
Tips:
- For a richer broth: Add a few chicken bouillon cubes for extra flavor, or make homemade chicken broth if you have leftover chicken bones.
- Add herbs: You can add fresh or dried herbs like parsley, thyme, or bay leaves for extra flavor. Add them in with the vegetables at the beginning.
- Make it gluten-free: Substitute egg noodles with gluten-free pasta or rice noodles for a gluten-free version.
This recipe is perfect for a cozy, healing bowl of soup, especially on chilly days or when you need a little comfort!
