Slow Cooker Chicken Noodle Soup:

Ingredients:

  • 8 cups chicken broth (store-bought or homemade) or substitute with 8 bouillon cubes dissolved in 8 cups of water
  • 1 lb boneless skinless chicken breasts or thighs
  • 1½ cups celery, sliced
  • 1½ cups carrots, sliced
  • ½ cup yellow onion, diced
  • 1 tsp minced garlic (or 1 tsp garlic powder)
  • ¼ tsp black pepper
  • Salt, to taste (add at the end)
  • 1 package egg noodles, cooked according to package directions (usually around 12 oz)

Instructions:

Step 1: Prep the Ingredients

  1. Slice the vegetables: Slice the celery and carrots into thin pieces, and dice the yellow onion. Mince the garlic if you’re using fresh garlic.

Step 2: Add Ingredients to the Slow Cooker

  1. Combine in slow cooker: Place the 8 cups of chicken broth, 1 lb chicken breasts or thighs, sliced celery, sliced carrots, diced onion, 1 tsp minced garlic, and ¼ tsp black pepper into the slow cooker.
  2. Cover and cook: Set your slow cooker to LOW and cook for 8 hours. If you’re in a hurry, you can also cook on HIGH for 4 hours.
