S’mores Cookies

Ingredients:

  • 1 package of Baker’s Corner Chocolate Chip Cookie Mix (from Aldi)
  • 1/2 cup (1 stick) of salted butter, softened
  • 1 large egg
  • 1 cup of mini marshmallows (available in Aldi’s baking aisle)
  • 1 cup of graham cracker crumbs (you can crush graham crackers from Aldi if needed)
  • 1 cup of chocolate chips (Baker’s Corner or Aldi’s store brand)

Instructions:

  1. Preheat the Oven:
    Preheat your oven to 350°F (175°C).
  2. Prepare Cookie Dough:
  • In a large bowl, combine the chocolate chip cookie mix with the softened butter and the egg. Mix until the dough comes together, following the instructions on the cookie mix package.
  1. Add S’mores Ingredients:
  • Gently fold in the mini marshmallows, graham cracker crumbs, and chocolate chips into the cookie dough. Make sure everything is evenly distributed throughout the dough.
  1. Shape Cookies:
  • Scoop tablespoon-sized portions of dough and roll them into balls. Place them on a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  1. Bake:
  • Bake in the preheated oven for about 20 minutes, or until the edges are golden brown. The centers may still look slightly soft; they will firm up as they cool.
  1. Cool:
  • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Tips:

  • For a gooier texture, add a few extra marshmallows on top of the cookies before baking.
  • Store in an airtight container to keep them fresh.
