Ingredients:
- 4-5 medium yellow squash, sliced into circles
- 1 large sweet onion, finely chopped

- 2 cups shredded cheddar cheese
- 1 can (10.5 oz) cream of mushroom or chicken soup
- 1/4 cup mayonnaise
- 1 can (12 oz) evaporated milk
- 3 eggs, lightly beaten
- 2 sleeves saltine or Ritz crackers, crushed
- 1 stick butter, melted
Instructions:
- Prepare the Squash and Onion:
- In a large pot, add the sliced squash, chopped onion, and 2 tablespoons bacon grease or butter. Add about 2 cups of water to cover.
