Southern Squash Casserole

This rich and creamy Southern Squash Casserole brings together tender squash, cheese, and a buttery cracker topping for a comforting side dish that’s a family favorite.


Ingredients:

  • 4-5 medium yellow squash, sliced into circles
  • 1 large sweet onion, finely chopped
  • 2 tbsp bacon grease or butter
  • Salt and pepper (snp) to taste
  • 2 cups shredded cheddar cheese
  • 1 can (10.5 oz) cream of mushroom or chicken soup
  • 1/4 cup mayonnaise
  • 1 can (12 oz) evaporated milk
  • 3 eggs, lightly beaten
  • 2 sleeves saltine or Ritz crackers, crushed
  • 1 stick butter, melted

Instructions:

  1. Prepare the Squash and Onion:
  • In a large pot, add the sliced squash, chopped onion, and 2 tablespoons bacon grease or butter. Add about 2 cups of water to cover.
  • Bring to a boil and cook until the squash and onions are just softened, around 5-7 minutes.
  • Drain thoroughly to remove as much moisture as possible (important for the casserole’s texture!).
  1. Make the Filling:
  • In a large mixing bowl, combine 1 can of cream of mushroom (or chicken) soup, 3 eggs, 1 can evaporated milk, 1/4 cup mayonnaise, 2 cups shredded cheddar cheese, and season with salt and pepper to taste.
  • Stir well to combine until smooth.
  1. Assemble the Casserole:
  • Add the drained squash and onions to the bowl with the wet mixture. Fold everything together until the squash is evenly coated.
  • Pour this mixture into a 9×13 baking dish that has been greased or sprayed with nonstick spray.
  1. Prepare the Topping:
  • Crush 2 sleeves of saltine or Ritz crackers into fine pieces.
  • Pour 1 stick of melted butter over the crushed crackers, stirring to coat them evenly.
  • Sprinkle this buttery cracker mixture evenly over the top of the casserole.
  1. Bake:
  • Place the casserole in the oven and bake at 350°F (175°C) for about 35 minutes, or until the top is golden and the casserole is bubbling around the edges.
  1. Serve and Enjoy:
  • Let cool slightly before serving. This casserole is creamy, cheesy, and perfectly comforting!

Tips:

  • For Extra Flavor: Add a sprinkle of paprika or a pinch of garlic powder to the filling for added depth.
  • Customize the Topping: Substitute some or all of the crackers with crispy fried onions for an alternative crunch.
