Spinach Artichoke Dip

Prep Time: 15 minutes
Cook Time: 30 minutes
Total Time: 45 minutes
Servings: 8-10

Ingredients:

  • 2 (8 oz) blocks cream cheese, softened
  • 12 ounces sour cream
  • 3/4 bag (about 9 oz) frozen spinach, thawed and drained
  • 1 (14 oz) can artichoke hearts, drained and chopped
  • 1 1/2 cups grated Parmesan cheese, divided
  • 1 tablespoon minced garlic
  • Black pepper, to taste
  • 1 loaf French bread, sliced (for serving)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the softened cream cheese and sour cream. Mix until smooth and well combined.
  3. Squeeze any excess moisture from the thawed spinach and add it to the bowl with the cream cheese mixture.
  4. Add the chopped artichoke hearts, 1 cup of the grated Parmesan cheese, minced garlic, and black pepper to the bowl. Mix until all ingredients are evenly incorporated.
  5. Transfer the dip mixture to a 9-inch baking dish or cast iron skillet, spreading it out evenly.
  6. Sprinkle the remaining 1/2 cup of grated Parmesan cheese over the top of the dip.
  7. Bake the dip in the preheated oven for 25 minutes, or until heated through and the cheese on top is melted and lightly golden.
  8. If desired, switch the oven to broil and broil the dip for an additional 2-3 minutes to achieve a more golden-brown top. Watch carefully to avoid burning.
  9. Remove the dip from the oven and let it cool for 5-10 minutes before serving.
  10. Serve the warm spinach artichoke dip with sliced French bread for dipping.

Tips:

  • To thaw frozen spinach quickly, place it in a colander and run cold water over it until it’s no longer frozen. Then, use your hands to squeeze out as much excess water as possible.
  • For a creamier dip, substitute some of the Parmesan cheese with shredded mozzarella or fontina cheese.
  • If you prefer a spicier dip, add a pinch of red pepper flakes or a dash of hot sauce to the mixture before baking.
  • Leftover dip can be stored in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave or in a 350°F oven until warmed through.
