Stuffed Biscuits & Gravy Breakfast

Ingredients:

  • 1 can of refrigerated biscuits (8 biscuits)
  • 4 large eggs
  • 1/4 cup milk
  • 1 cup shredded cheddar cheese
  • 4 slices of bacon, cooked and crumbled
  • 4 sausage links, cooked and crumbled
  • Salt and pepper to taste
  • 1 packet of instant peppered cream gravy mix
  • 2 cups of water (or as directed on gravy mix packet)
  • Additional crumbled sausage (optional, from leftover sausages)

Instructions:

  1. Prepare the Eggs:
    • In a medium bowl, whisk together the eggs, milk, salt, and pepper.
    • Heat a non-stick skillet over medium heat and pour in the egg mixture.
    • Scramble the eggs until they are fully cooked but still moist.
    • Remove from heat and stir in the shredded cheddar cheese until melted.
    • Add the crumbled bacon and sausage to the scrambled eggs. Set aside.
  2. Prepare the Biscuits:
    • Preheat your oven according to the temperature specified on the biscuit package.
    • Open the can of biscuits and separate them.
    • On a clean, floured surface, use a rolling pin or your hands to flatten each biscuit into a 5-6 inch circle.
  3. Stuff the Biscuits:
    • Spoon a generous amount of the cheesy scrambled egg mixture onto the center of each flattened biscuit.
    • Fold the edges of the biscuit over the filling and pinch to seal, forming a ball.
    • Place the stuffed biscuits seam-side down on a baking sheet lined with parchment paper or a lightly greased baking sheet.
  4. Bake the Biscuits:
    • Bake the stuffed biscuits according to the package directions, typically around 12-15 minutes, or until they are golden brown and cooked through.
    • Remove from oven and let cool slightly.
  5. Prepare the Gravy:
    • While the biscuits are baking, prepare the instant peppered cream gravy according to the packet instructions.
    • Generally, this involves whisking the gravy mix with water and bringing it to a boil, then simmering until thickened.
    • Stir in any additional crumbled sausage if desired.
  6. Serve:
    • Place the warm stuffed biscuits on a plate.
    • Pour the hot peppered cream gravy over the biscuits.
    • Serve immediately and enjoy!

Tips for Freezing and Reheating:

  • Freezing: Let the stuffed biscuits cool completely. Place them on a baking sheet and freeze until solid. Transfer to a freezer-safe bag or container.
  • Reheating: To reheat, preheat the oven to 350°F (175°C). Place the frozen biscuits on a baking sheet and bake for 15-20 minutes, or until heated through.
