Super Quick and Easy Sausage and Potato Dinner

Ingredients:

  • 1 pound smoked sausage, sliced into 1/4-inch rounds
  • 2 pounds russet potatoes, peeled and chopped into 1-inch cubes
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup milk (any type you prefer)
  • 1 teaspoon onion powder (or 1 medium onion, finely chopped)
  • Salt and pepper to taste
  • Optional: chopped fresh parsley for garnish

Instructions:

  1. Prepare the Ingredients:
    • Slice the smoked sausage into 1/4-inch rounds and set aside.
    • Peel and chop the russet potatoes into 1-inch cubes. Rinse the potatoes under cold water to remove excess starch, then drain well.
    • If using a regular onion, finely chop it.
  2. Mix the Soup and Milk:
    • In a medium bowl, combine the can of cream of mushroom soup and 1 cup of milk. Stir until the mixture is smooth and well-blended.
  3. Layer the Ingredients in the Slow Cooker:
    • In the bottom of your slow cooker, place the chopped potatoes.
    • Scatter the sliced smoked sausage over the potatoes.
    • If using a regular onion, sprinkle the chopped onion over the sausage and potatoes. If using onion powder, sprinkle it evenly over the sausage and potatoes.
  4. Add the Soup Mixture:
    • Pour the soup and milk mixture evenly over the sausage and potatoes.
    • Gently stir to combine the ingredients, making sure the soup mixture coats everything well.
  5. Season and Cook:
    • Season the mixture with salt and pepper to taste.
    • Cover the slow cooker with the lid and cook on low for 6 hours. The potatoes should be tender, and the flavors will be well combined.
  6. Finish and Serve:
    • Once the cooking time is complete, stir the mixture gently to ensure everything is well-coated in the creamy sauce.
    • If desired, sprinkle chopped fresh parsley over the top for a pop of color and added freshness.
    • Serve hot and enjoy your quick and easy sausage and potato dinner!

Tips:

  • You can customize this dish by adding other vegetables like carrots, celery, or bell peppers.
