Banana Muffins
Ingredients:
- 1 bag of muffin mix (your choice of flavor)
- 1 cup of milk (or water as a substitute)
- 2 ripe bananas
- Non-stick spray or oil for greasing the muffin tin
Instructions:
- Preheat the oven:
- Preheat your oven to 375°F (190°C).
- Prepare the muffin mix:
- Follow the instructions on the muffin mix bag. Typically, this involves combining the dry muffin mix with milk (or water) in a mixing bowl. Stir until the batter is smooth.
- If your mix requires eggs or oil, be sure to add them as well according to the instructions on the package.
- Mash the bananas:
- Peel the two ripe bananas and place them in a separate bowl. Use a fork or potato masher to mash the bananas until they are smooth with only a few small lumps.
- Combine bananas with muffin mix:
- Add the mashed bananas to the prepared muffin mix. Gently fold the bananas into the batter until well incorporated. Be careful not to overmix.
- Prepare the muffin tin:
- Lightly spray the muffin tin with non-stick spray or grease it with oil to prevent the muffins from sticking. If you’re using muffin liners, you can skip this step.
- Fill the muffin tin:
- Pour the muffin batter into the prepared muffin tin, filling each cup about 2/3 full. This allows room for the muffins to rise as they bake.
- Bake:
- Place the muffin tin in the preheated oven and bake for about 25 minutes, or until the tops of the muffins are lightly golden brown. You can check for doneness by inserting a toothpick into the center of a muffin—if it comes out clean, they’re ready.
- Cool:
- Once done, remove the muffins from the oven and allow them to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Serving:
- Serve the muffins warm or at room temperature. They can be enjoyed immediately or stored for later. According to your kids, hiding a few pieces for later is highly recommended!
These muffins should come out fluffy and moist, with a lovely banana flavor that your kids will continue to love.
